貽貝,又名“紫貽貝”,北方稱海虹。瓣鰓綱,貽貝科,貝殼中等大,一般殼長6-8厘li米mi,呈cheng楔xie形xing,頂ding端duan尖jian,腹fu緣yuan略lve直zhi,背bei緣yuan弧hu形xing,小xiao月yue麵mian不bu明ming顯xian。殼ke薄bo,表biao麵mian紫zi黑hei色se,具ju光guang澤ze殼ke內nei麵mian灰hui白bai色se,或huo淺qian藍lan色se,具ju珍zhen珠zhu光guang澤ze。生sheng長chang紋wen細xi,明ming顯xian,自zi頂ding部bu起qi成cheng環huan形xing生sheng長chang,自zi殼ke頂ding至zhi殼ke後hou緣yuan常chang有you不bu明ming顯xian的de放fang射she線xian,以yi足zu絲si附fu著zhe於yu他ta物wu上shang,分fen布bu於yu我wo國guo黃huang、渤海,一般生活在低潮線至水深3米左右水色清澈的岩礁上。產卵期較長,一般自10月到翌年5月間皆能產卵,1958nianqi,woguocaiyongyanshengshifufayangzhi,litiliyongshuiti,danchandadatigao,bingqiecongbeifangyanhaifazhandaonanfangyanhai,roukegongxianshi,jiagongchengshuganpinchengzhiweidancai,nongsuodetangzhichengyibeiyou,yibeiyingyangfengfu,weidaoxianmei,suyouhaizhongjidanzhicheng,juceding,meiyibaikedancaihandanbaizhi59.1克,脂肪7.6克,糖類13.4克,鈣277毫克,磷864毫克,鐵24.5毫克,碘0.12毫克,核黃素0.46毫克,尼克酸3.1毫克,貽貝不僅是餐桌上的美味,而且有滋陰、調經、補肝腎、益精血之功能。貽貝的殼可做貝雕原料,粉碎成粉可做肥料或做飼料的添加劑。
(一)淡菜
1.原料:以(yi)當(dang)天(tian)或(huo)頭(tou)一(yi)天(tian)從(cong)海(hai)上(shang)采(cai)收(shou)的(de)鮮(xian)貽(yi)貝(bei)作(zuo)為(wei)加(jia)工(gong)淡(dan)菜(cai)的(de)原(yuan)料(liao),原(yuan)料(liao)不(bu)可(ke)久(jiu)放(fang),因(yin)為(wei)時(shi)間(jian)一(yi)長(chang),貽(yi)貝(bei)就(jiu)變(bian)瘦(shou),影(ying)響(xiang)出(chu)成(cheng)率(lv)。如(ru)果(guo)當(dang)天(tian)不(bu)能(neng)加(jia)工(gong)的(de)鮮(xian)貝(bei),最(zui)好(hao)在(zai)海(hai)水(shui)池(chi)中(zhong)暫(zan)養(yang)。
2.分粒洗刷:從海上采來的貽貝一般是足絲將個體串連成團,而且表層浮泥較多,為了使貽貝肉、湯純淨,必須采用人工或機械將成團的貽貝撕裂成單體狀態,分粒後用海水洗滌,去掉泥沙等雜質。
3.蒸煮:可(ke)采(cai)用(yong)循(xun)環(huan)式(shi)或(huo)密(mi)閉(bi)式(shi)的(de)蒸(zheng)籠(long),通(tong)入(ru)蒸(zheng)氣(qi)將(jiang)貽(yi)貝(bei)蒸(zheng)熟(shu),也(ye)可(ke)在(zai)鍋(guo)中(zhong)加(jia)少(shao)量(liang)水(shui)煮(zhu),其(qi)程(cheng)度(du)皆(jie)達(da)到(dao)兩(liang)殼(ke)張(zhang)開(kai)即(ji)可(ke)。火(huo)候(hou)的(de)掌(zhang)握(wo)很(hen)重(zhong)要(yao),缺(que)火(huo)或(huo)過(guo)火(huo)都(dou)會(hui)影(ying)響(xiang)成(cheng)品(pin)質(zhi)量(liang)和(he)出(chu)成(cheng)率(lv),不(bu)論(lun)采(cai)用(yong)蒸(zheng)或(huo)煮(zhu),都(dou)要(yao)求(qiu)急(ji)火(huo),切(qie)忌(ji)用(yong)慢(man)火(huo)。
4.摘肉:逐(zhu)個(ge)將(jiang)貝(bei)肉(rou)摘(zhai)下(xia),盡(jin)量(liang)把(ba)閉(bi)殼(ke)股(gu)全(quan)部(bu)取(qu)下(xia),以(yi)保(bao)證(zheng)貝(bei)肉(rou)的(de)完(wan)整(zheng),如(ru)果(guo)貝(bei)肉(rou)上(shang)有(you)足(zu)絲(si),要(yao)先(xian)將(jiang)足(zu)絲(si)去(qu)掉(diao),再(zai)將(jiang)肉(rou)摘(zhai)下(xia),如(ru)因(yin)天(tian)氣(qi)不(bu)好(hao)或(huo)傍(bang)晚(wan)不(bu)能(neng)出(chu)曬(shai),應(ying)帶(dai)殼(ke)存(cun)放(fang)於(yu)通(tong)風(feng)處(chu),也(ye)有(you)連(lian)同(tong)貝(bei)殼(ke)一(yi)起(qi)出(chu)曬(shai),幹(gan)燥(zao)後(hou)再(zai)摘(zhai)肉(rou)的(de)。
5.出曬:將貝肉薄薄一層撒在席子上,待表層稍幹後再翻曬,當曬到八九成幹時收堆起來,2-3天後再出曬至全幹即可包裝入庫,出成率一般在6%左右。
6.成品質量規格要求:一級品:每500克在120粒以內,色鮮豔有光澤,呈紅黃色或紅白色,身足幹,適於長期保管,完整率在80%以上,個頭均勻,無足絲,無雜質。二級品:每500克在250粒以內,餘者同一級品。三級品:每500克在400粒以內,餘者同一級品。四級品:每500克在700粒以內,餘者同一級品。五級品:每500克在900粒以內,餘者同一級品。
7.包裝:用塑料袋包裝密封,每袋淨重250克或500克,最後裝大紙箱。
(二)貽貝油
