(1)製取澱粉:將綠豆用清水洗淨,盛在大缸中浸泡一晝夜使其吸足水分。用磨將浸好的綠豆磨碎,磨時按每100kg綠豆加入400kg清qing水shui,磨mo成cheng稀xi漿jiang。把ba磨mo好hao的de豆dou漿jiang裝zhuang入ru大da缸gang,兌dui入ru清qing漿jiang,充chong分fen拌ban勻yun,靜jing置zhi。使shi澱dian粉fen明ming顯xian沉chen降jiang。幾ji小xiao時shi後hou,將jiang上shang層ceng清qing水shui層ceng除chu去qu,將jiang中zhong間jian的de毛mao粉fen層ceng取qu出chu裝zhuang入ru第di二er個ge缸gang中zhong,加jia入ru清qing漿jiang,充chong分fen攪jiao拌ban,使shi澱dian粉fen沉chen澱dian。靜jing置zhi沉chen降jiang後hou,再zai按an上shang法fa將jiang毛mao粉fen層ceng盛sheng入ru第di三san個ge缸gang中zhong,加jia清qing漿jiang攪jiao拌ban,沉chen降jiang。直zhi至zhi毛mao粉fen中zhong無wu澱dian粉fen沉chen降jiang為wei止zhi。撇pie除chu上shang麵mian清qing水shui,取qu出chu沉chen澱dian的de澱dian粉fen,用yong細xi篩shai或huo沙sha布bu過guo濾lv除chu去qu碎sui渣zha。過guo濾lv時shi加jia入ru清qing水shui和he清qing漿jiang反fan複fu衝chong濾lv。濾lv出chu液ye再zai裝zhuang入ru缸gang中zhong沉chen澱dian。除chu去qu上shang麵mian清qing水shui,取qu出chu沉chen澱dian的de濕shi澱dian粉fen裝zhuang入ru布bu袋dai中zhong瀝li出chu水shui分fen,即ji為wei綠lv豆dou澱dian粉fen坨tuo。
(2)衝製:取10kg綠豆澱粉,搗成碎麵。無疙瘩、顆粒。然後加入溫水20kg,明礬40g,攪拌均勻至粘稠狀。取沸開水45kg,迅速衝攪,使之均勻熟透。衝熟後迅速倒入一定規格的箱套中,拉平表麵,與做豆腐相似,靜置,使其冷卻成凍。
(3)切塊:chonghuchengdonghou,fankouzaiqingjiedebankuangzhong,anguigeyongdaoqiechengkuaijiweichengpin。yekezaichushoushigenjuxiaofeizhexuyaofenge。zhizuoshiyingbaochixiangtaopinghua,quxiangtaoshikewangxiangtaozhongjiaxielengshui。yiban5kg澱粉可製作涼粉10kg。也可製粉絲、粉皮。
