製作方法 具體製造大豆火腿,先要製造一種稱為“納豆”的de日ri本ben食shi品pin,它ta的de製zhi法fa與yu我wo國guo的de豆dou鼓gu類lei似si,了le是shi大da豆dou經jing發fa酵jiao後hou製zhi成cheng的de。方fang法fa是shi先xian把ba大da豆dou在zai水shui中zhong浸jin泡pao一yi晚wan上shang,使shi其qi充chong分fen吸xi收shou水shui分fen後hou蒸zheng熟shu,接jie種zhong納na豆dou菌jun芽ya孢bao,納na豆dou菌jun是shi屬shu於yu枯ku草cao幹gan菌jun(B.subtilis)的好氣性有芽孢細菌。接種在40~42℃下,發酵16~20小時,就成為納豆。食用時拌入醬油及鹽等。
