(2)製豆腐坯①選豆。除去雜物、泥砂和黴爛變質的豆粒。②浸泡。應用符合國家飲用水標準的軟水,用水量為大豆質量的3倍~4倍。一般浸泡時間冬季為14h~18h,夏季為6h~7h,春秋季為12h~16h。浸泡至大豆粒飽滿無皺皮,用手擠壓能成兩瓣即可。③磨漿。要求磨3次,第1次和第2次磨成的漿合並備用,第3次磨漿的水可用於第2次磨漿。④煮漿。火力要大,要使豆漿在較短的時間內煮到95℃~100℃,豆漿煮好後維持2min~3min。⑤點漿。石膏用量一般為每100kg幹大豆用2kg~3kg石膏粉,將石膏粉溶入水後加入一定溫度的豆漿內,及時攪拌均勻。點漿後靜置5min以上。⑥成型、劃塊。裝匣成型前豆腐匣和濾布洗刷幹淨,每匣應裝均勻,使豆塊厚薄一致,四角應壓緊壓齊。裝好後逐漸加壓,榨出水分,壓幹後(水分為65%~75%)將匣鬆開,去布,反鋪於板上,用刀將豆腐按要求的規格劃塊,要求塊的大小均勻一致。
