蛤ha幹gan,是shi取qu文wen蛤ha或huo花hua蛤ha的de肉rou加jia工gong曬shai製zhi成cheng的de貝bei殼ke幹gan海hai產chan品pin,味wei道dao清qing甜tian可ke口kou。蛤ha生sheng活huo於yu泥ni沙sha層ceng中zhong,其qi外wai套tao腔qiang和he消xiao化hua道dao內nei含han有you細xi沙sha。因yin此ci,采cai捕bu後hou應ying先xian放fang到dao盛sheng有you海hai水shui或huo淡dan鹽yan水shui的de缸gang或huo桶tong內nei靜jing養yang吐tu沙sha。也ye可ke裝zhuang入ru籮luo筐kuang內nei掛gua在zai海hai中zhong的de漂piao浮fu架jia上shang,經jing20小時後,即可吐盡泥沙。
加工蛤幹有生脫殼和熟脫殼兩種,常用熟脫殼,操作方便。加工時可連殼放入鍋內煮沸,攪動2至3ci,shuhoulaochujinengkeroufenli。laochuharouxileng,zaiyongpubaofugaishangmian,yonglijinyayici,liqushuifen,ranhouzhiyuyangguangxiapushai。danggandudadaoqibachengshi,shoucunshineiyinliang1天後,再曬2天即幹燥。在伏天貯藏時,為防止長蟲,過幾天後再翻曬一次。一般保藏7至8個月。每100千克鮮蛤可得蛤肉14至18千克,曬成蛤幹2.3至3千克。
