銀魚通體透明,全身可食,肉味鮮美,肉質細嫩,營養豐富,高蛋白、低(di)脂(zhi)肪(fang),是(shi)我(wo)國(guo)傳(chuan)統(tong)出(chu)口(kou)且(qie)很(hen)有(you)特(te)色(se)的(de)商(shang)品(pin),深(shen)受(shou)消(xiao)費(fei)者(zhe)歡(huan)迎(ying)。近(jin)年(nian)來(lai),銀(yin)魚(yu)保(bao)鮮(xian)加(jia)工(gong)質(zhi)量(liang)有(you)所(suo)下(xia)降(jiang),如(ru)不(bu)引(yin)起(qi)重(zhong)視(shi),將(jiang)會(hui)影(ying)響(xiang)其(qi)加(jia)工(gong)出(chu)口(kou)質(zhi)量(liang),進(jin)而(er)影(ying)響(xiang)到(dao)我(wo)國(guo)出(chu)口(kou)水(shui)產(chan)品(pin)的(de)信(xin)譽(yu)。
一、當前存在的主要問題
1、哄搶抬價收購,湖麵收鮮質量下降。湖區水產品冷凍加工廠不斷增多,沿湖各市、xian,zaiyinyushengchanjijie,fenfenchuchuanhumianshouxian。youyuquefatongyixietiaohecaiquyouxiaodecuoshi,jiazhishougouchuanzhiheshangfanshuliangzhunianzengduo,zhishiliannianchuxianhumianshougouyinyuhongqiangtaijiaxianxiang。yinyutonghuojiagecong12元/千克猛漲到35元/千克,而不是按質論價。相互抬價收購的結果,不僅價格失控,更嚴重的是導致保鮮質量下降,使混雜有小魚、小蝦、水草等雜物的質次價高的銀魚進入加工廠,造成損耗高、出品率低。
2、冷藏、保鮮措施不力。目前全國銀魚產地,尤其是剛移植成功的地區均用水桶、塑料桶帶冰保鮮,由於其深度較高,魚貨堆壓,且收購船隻正常情況下在湖麵收購運輸約需10xiaocainenghuigang,xianshougoudeyinyuzhiliangxiajiangjiaoweimingxian。tongshiyouquefagerebaowenzhuangzhi,jiabingbuzu,fubingbuyun,bingzhijiaocu,bunengyouxiaodibaozhengbingxianzhiliang。
3、加工廠質量管理不夠。少數加工廠質量意識不強,管理製度不完善,不嚴格按加工工藝操作要求進行生產,擅自省掉“粗漂洗”gongxu,zhishizhenggepiaoxisudujianman,jiagongshijianlachangeryingxiangzhiliang。youxiejiagongchangmeiyouzhuanyongpiaoxicaoercaiyongbingshuiliushuipiaoxi,shuiwengao,huanshuiyoubuqin,zazhicanliuduo,zaochengchengpinzhiliangqianjia。
4、速(su)凍(dong)溫(wen)度(du)不(bu)夠(gou)。目(mu)前(qian)出(chu)口(kou)銀(yin)魚(yu)多(duo)采(cai)用(yong)裝(zhuang)盒(he)包(bao)裝(zhuang)後(hou)冷(leng)凍(dong),凍(dong)結(jie)工(gong)藝(yi)設(she)備(bei)多(duo)為(wei)擱(ge)架(jia)排(pai)官(guan)凍(dong)結(jie),批(pi)次(ci)加(jia)工(gong)量(liang)小(xiao),與(yu)凍(dong)結(jie)間(jian)凍(dong)結(jie)量(liang)很(hen)難(nan)平(ping)衡(heng)生(sheng)產(chan),一(yi)些(xie)小(xiao)型(xing)加(jia)工(gong)廠(chang)則(ze)采(cai)取(qu)隨(sui)時(shi)加(jia)工(gong)、隨時進凍的辦法,使速凍間溫度不能穩定在-23度以下,速凍變成“慢凍”,魚體水分析出,凍結銀魚內在質量受到影響。另外,水分析出易使凍塊結凍,封住包裝盒,影響外觀。
5、銀魚產品質量不高。長期以來,由於銀魚產量不能滿足市場需求,每年外貿缺口量較大,因此,質量較差的銀魚也能銷售,造成“皇帝的女兒不愁嫁”dejumian。yinci,duonianlaijicengshengchandanweizhizhongshichanliang,hushizhiliang,duoshushengchandanweimeiyouzhuanmendejigouhezhuanzhirenyuanlaiguanliyinyudezhiliang,gengwuzequan,lingwai,zaijiageshangyemeiyoushixingyouzhiyoujiadezhengce,chanpinzhiliangwentixiandeyuelaiyuetuchu。
6、沒有嚴格的銀魚保鮮規章製度,湖、庫上保鮮措施不力,保鮮意識有待進一步提高。銀魚含水份高, 是易腐食品,隻有搞好生產第一線保鮮,即從船上分選、裝箱、加冰保鮮做起,直到起卸、加工入庫、市場銷假售、waimaochukoudenghuanjie,yihuankouyihuan,zhidinghelidecaozuoguichengcainengbaozhengyinyudexiandu。baoxiandeguanjianshibixuchedigaibiansanzhuangyuhuo,ercaiyongchuanshangxiangzhuang。sanzhuangdebingxianyudebaoxianqizhiyou7-8天,但裝箱冰鮮魚的保鮮期可比散裝延長3-4天,既能提高鮮魚的質量,又可避免卸魚時的機械損傷。
7、bingyuanjinzhang,bingdezhiliangbugao。woguomuqianyinyudezhuyaobaoxianfangshishibingzangbaoxian,yinyubaoxiandeyongbingbuzuwentijiangsuishengchandefazhanergengjiatuchu。dangqianyuyeshangshiyongderenzaobing,chushuliangbunengmanzuwai,zhiliangyejiaocha,bingtai“嫩”,極易融化,不能將冰如數地用於我銀魚的保鮮上,冰塊粗,多棱角對銀魚魚體損傷很大。
二、加強銀魚鮮品質質量管理的幾點建議
銀魚生產收購保鮮加工中暴露出的一係列問題,必須采取措施加以解決,使銀魚這個出口創彙的拳頭產品能在國際市場上站穩腳跟。

3、加強和完善質量管理的各項規章製度,銀魚加工廠要嚴格執行加工、操(cao)作(zuo)規(gui)程(cheng),把(ba)好(hao)加(jia)工(gong)質(zhi)量(liang)關(guan),對(dui)不(bu)完(wan)善(shan)的(de)加(jia)工(gong)設(she)備(bei)進(jin)行(xing)技(ji)術(shu)改(gai)造(zao),使(shi)其(qi)與(yu)加(jia)工(gong)工(gong)藝(yi)相(xiang)符(fu)合(he)。製(zhi)定(ding)銀(yin)魚(yu)質(zhi)量(liang)管(guan)理(li)條(tiao)例(li),規(gui)定(ding)保(bao)鮮(xian)要(yao)求(qiu)和(he)操(cao)作(zuo)規(gui)程(cheng)。各(ge)道(dao)工(gong)序(xu)都(dou)有(you)應(ying)有(you)專(zhuan)人(ren)負(fu)責(ze)把(ba)關(guan),把(ba)質(zhi)量(liang)指(zhi)標(biao)作(zuo)為(wei)考(kao)核(he)內(nei)容(rong)層(ceng)層(ceng)落(luo)實(shi)下(xia)去(qu),要(yao)低(di)溫(wen)處(chu)理(li),迅(xun)速(su)冷(leng)卻(que),低(di)溫(wen)下(xia)細(xi)菌(jun)和(he)酶(mei)的(de)活(huo)性(xing)及(ji)化(hua)學(xue)變(bian)化(hua)的(de)速(su)度(du)都(dou)大(da)大(da)降(jiang)低(di),所(suo)以(yi)低(di)溫(wen)對(dui)銀(yin)魚(yu)保(bao)鮮(xian)極(ji)為(wei)有(you)利(li),逐(zhu)步(bu)建(jian)立(li)從(cong)收(shou)購(gou)船(chuan)隻(zhi)到(dao)陸(lu)上(shang)直(zhi)至(zhi)消(xiao)費(fei)者(zhe)的(de)低(di)溫(wen)流(liu)通(tong)的(de)“冷藏鏈”體係。
