粉皮是用澱粉製成的傳統食品,適宜於農戶家庭製作,工具也很簡單。
製作方法 1.調糊:取含水量約為45~50%的潮澱粉,用約為粉量2.5beidelengshuixuxujiaru,bingyongmubangbuduandejiaoban,tongshizaichaodianfenzhongjiaruqianfenzhisandemingfan。mingfannengzengjiafenpiderenxinghedanxing,bingqiehaiyoufangfuheshushuizuoyong,shichanpinbuyixishishouchao。
2.成型。用粉勺取調成的粉糊少許,放入旋盤內,旋盤為銅或白鐵皮做成的,直徑約20limi,dibulveweiwaitudeqianpan。fenhujiaruhou,jijiangpanfuruguozhongdekaishuishangmian,bingyongshoubodongxuanzhuan,shifenhushoudaolixinlidezuoyongsuizhiyoupandizhongxinxiangsizhoujunyunditankai,tongshishoureeranxuanpandibudexingzhuanghedaxiaohuhuachengxing。daizhongxinmeiyoubaidianshi,jibianpanjichu,zhiyuqingshuizhong,lengquepiankehouzaijiangchengxingdefenpituochufangzaiqingshuizhonglengque。zaichengxingcaozuoshi,tiaofengangzhongdefenhuxuyaoshishijiaodong,shixibojunyun。
3.攤晾。將水粉皮用製澱粉時的酸漿浸3~5分鍾,可以脫去部分色素和表麵的粘性,且能增加光澤。如有條件還可以用硫磺熏一下,這樣防黴、漂piao白bai和he防fang蛀zhu的de效xiao果guo就jiu會hui更geng好hao。經jing浸jin漿jiang或huo熏xun硫liu後hou的de水shui粉fen皮pi,攤tan在zai散san有you幹gan淨jing稻dao草cao的de竹zhu簾lian上shang晾liang幹gan,並bing翻fan轉zhuan一yi次ci,使shi兩liang麵mian幹gan燥zao均jun勻yun。待dai晾liang幹gan至zhi水shui分fen含han量liang為wei16~17%時,就可以收藏或包裝運銷。
