1.晾曬蹂踩。酸棗成熟後即可采摘,一般采摘的最佳時間為10月。過早采摘,果實成熟度不完全,利用率不高;過guo晚wan采cai摘zhai,棗zao核he黴mei爛lan較jiao多duo。采cai回hui的de酸suan棗zao不bu能neng堆dui放fang時shi間jian太tai長chang,因yin為wei其qi含han水shui量liang較jiao多duo,應ying及ji時shi攤tan在zai平ping地di上shang晾liang曬shai,避bi免mian黴mei爛lan而er失shi去qu活huo性xing。在zai每mei日ri的de晾liang曬shai中zhong要yao翻fan動dong多duo次ci,使shi所suo有you酸suan棗zao均jun勻yun幹gan燥zao。一yi般ban在zai水shui泥ni地di麵mian上shang晾liang曬shai兩liang三san天tian,在zai土tu地di麵mian上shang晾liang曬shai四si五wu天tian,即ji可ke出chu現xian果guo皮pi皺zhou縮suo,或huo搖yao動dong果guo實shi能neng聽ting到dao響xiang聲sheng,說shuo明ming果guo肉rou與yu果guo核he出chu現xian間jian隙xi,即ji可ke停ting止zhi晾liang曬shai,開kai始shi退tui皮pi。量liang少shao時shi,人ren工gong反fan複fu用yong腳jiao蹂rou踩cai,使shi果guo肉rou與yu果guo核he脫tuo離li;量多時,可利用較輕的圓形碾石碾壓,一般重量為50公斤左右,一邊碾壓,一邊翻動,反複多次後即可退皮。
2.清qing洗xi過guo濾lv。經jing過guo踩cai蹂rou或huo碾nian壓ya後hou,果guo皮pi與yu核he就jiu可ke脫tuo離li,但dan相xiang互hu仍reng混hun合he在zai一yi起qi,不bu能neng直zhi接jie利li用yong。為wei了le分fen離li棗zao核he,就jiu要yao清qing洗xi過guo濾lv。把ba混hun合he物wu倒dao入ru盛sheng水shui的de桶tong內nei,經jing過guo攪jiao拌ban,分fen離li的de果guo肉rou、果(guo)皮(pi)和(he)其(qi)他(ta)雜(za)物(wu)就(jiu)會(hui)漂(piao)浮(fu)出(chu)水(shui)麵(mian),用(yong)過(guo)濾(lv)器(qi)過(guo)濾(lv)除(chu)去(qu)。沉(chen)澱(dian)在(zai)桶(tong)底(di)的(de)棗(zao)核(he),用(yong)手(shou)搓(cuo)洗(xi)幾(ji)遍(bian),直(zhi)到(dao)棗(zao)核(he)表(biao)麵(mian)幹(gan)淨(jing),再(zai)經(jing)攪(jiao)拌(ban)過(guo)濾(lv),就(jiu)可(ke)沉(chen)澱(dian)出(chu)幹(gan)淨(jing)的(de)棗(zao)核(he)。
3.幹(gan)燥(zao),貯(zhu)藏(zang)。剛(gang)沉(chen)澱(dian)出(chu)的(de)棗(zao)核(he)含(han)水(shui)量(liang)多(duo),應(ying)及(ji)時(shi)攤(tan)在(zai)平(ping)地(di)上(shang)晾(liang)曬(shai)六(liu)七(qi)天(tian),使(shi)其(qi)充(chong)分(fen)幹(gan)燥(zao)。然(ran)後(hou)收(shou)集(ji)起(qi)來(lai),裝(zhuang)入(ru)通(tong)氣(qi)的(de)布(bu)袋(dai)中(zhong),放(fang)在(zai)幹(gan)燥(zao)的(de)室(shi)溫(wen)下(xia)貯(zhu)藏(zang)。棗(zao)核(he)生(sheng)活(huo)力(li)較(jiao)強(qiang),一(yi)般(ban)當(dang)年(nian)或(huo)第(di)二(er)年(nian)露(lu)地(di)播(bo)種(zhong),出(chu)苗(miao)率(lv)較(jiao)高(gao),用(yong)來(lai)嫁(jia)接(jie)優(you)良(liang)棗(zao)品(pin)種(zhong)。
