海棠糕是滬上著名傳統名點,係用特製的模具灌漿烘烤製作。糕形似海棠花,色呈紫醬紅,香甜鬆軟,可謂色、香、味、形俱佳,同蘇州"梅花糕"一樣,同為一道具悠久曆史的花色點心,深受大眾的歡迎。
≮原料≯
主料:麵粉,老酵,豆沙,淨豬板油
輔料:食堿,白糖,紅綠瓜絲,花生油
≮做法≯
1、食堿加水化成水。麵粉入缸,用冷水拌和打成麵漿,放入老酵、堿水,拌和攪勻至麵漿呈百色時,灌入銅壺待用。
2、花生油加適量清水調和成水油。豆沙入缽,加白糖、水油拌和成濕豆沙餡心。豬板油切丁,加入白糖拌製成糖板油丁。
