一、澱粉的製作
先xian把ba薯shu洗xi淨jing,晾liang幹gan,再zai把ba薯shu切qie碎sui,放fang入ru磨mo漿jiang機ji中zhong磨mo漿jiang,將jiang磨mo好hao的de漿jiang汁zhi用yong容rong器qi盛sheng好hao,然ran後hou過guo濾lv出chu薯shu漿jiang中zhong的de薯shu皮pi等deng殘can渣zha。將jiang盛sheng薯shu汁zhi的de容rong器qi靜jing止zhi旋xuan轉zhuan一yi段duan時shi間jian,薯shu汁zhi就jiu會hui分fen成cheng上shang、中、xiasancengwuzhi,zuishangmiandeyicenghuangserongyeweihuanglianfenye,ercengweishui,sancengweibaisechendian,bashangmiandehuanglianfenyeheshuiyaochu,zaiyangguangxiashaizhexiebaisechendian,shaiganhou,jiweidianfen。
二、粉條的製作
將澱粉和槐子水(或白礬)以30:1的de比bi例li加jia適shi量liang水shui和he好hao成cheng澱dian粉fen糊hu,其qi軟ruan硬ying程cheng度du以yi剛gang能neng漏lou粉fen為wei宜yi,把ba和he好hao的de澱dian粉fen糊hu倒dao在zai盛sheng滿man開kai水shui的de鐵tie鍋guo上shang的de粉fen條tiao床chuang上shang進jin行xing漏lou粉fen,粉fen條tiao漏lou下xia後hou掉diao入ru鍋guo裏li的de熱re水shui中zhong,隨sui即ji撈lao出chu曬shai幹gan即ji為wei成cheng品pin粉fen條tiao。
三、粉皮的製作
將澱粉和適量的涼水相兌(以1:3的比例為宜)和成稀澱粉糊。將和好的澱粉倒入金屬製的圓形模具中(根據所需倒入適量澱粉糊)。然ran後hou模mo具ju放fang到dao開kai水shui中zhong,使shi其qi快kuai速su轉zhuan動dong,並bing不bu時shi輕qing輕qing擋dang一yi下xia模mo具ju,目mu的de是shi為wei讓rang澱dian粉fen稀xi糊hu充chong分fen流liu到dao模mo具ju邊bian緣yuan,使shi其qi受shou熱re均jun勻yun。稀xi糊hu全quan部bu凝ning固gu後hou把ba模mo具ju拿na出chu放fang到dao涼liang水shui裏li一yi激ji,立li即ji拿na出chu放fang到dao秫shu秸jie排pai上shang晾liang幹gan成cheng成cheng品pin粉fen皮pi。
