我國水產品的包裝多年來幾乎沒有變化,絕大多數新鮮水產品隻是用塑料箱盛裝後運輸到市場散售;冷凍魚類十幾斤一坨,用PEmohewalengzhixiangjiandanbaozhuang,zaishichangshangjiedonglingshou,henduoshuichanpinzaixiaoshoushiyijingbuzaixinxian,dadajiangdileqiyingyoudejiazhi。shuichanpinshiyanhaidiqudetianduhoudeyoushichanpin,zhongshi其包裝可以充分利用這一地域優勢,創出本地區的名牌產品,變優勢為利益。
水產品的特點是鮮活味美,但易於腐敗,要根據不同種類水產品的特性進行合理包裝。
水產品的大宗貨魚類
魚(yu)類(lei)的(de)體(ti)內(nei)外(wai)細(xi)菌(jun)多(duo),而(er)本(ben)身(shen)含(han)有(you)的(de)天(tian)然(ran)免(mian)疫(yi)素(su)卻(que)較(jiao)少(shao),魚(yu)肉(rou)中(zhong)的(de)酶(mei)有(you)分(fen)解(jie)蛋(dan)白(bai)質(zhi)的(de)作(zuo)用(yong),致(zhi)使(shi)肌(ji)肉(rou)組(zu)織(zhi)變(bian)軟(ruan),新(xin)鮮(xian)程(cheng)度(du)下(xia)降(jiang)。當(dang)分(fen)解(jie)產(chan)物(wu)達(da)到(dao)一(yi)定(ding)程(cheng)度(du)時(shi),魚(yu)肉(rou)還(hai)會(hui)發(fa)出(chu)臭(chou)味(wei),並(bing)為(wei)細(xi)菌(jun)進(jin)一(yi)步(bu)滋(zi)生(sheng)與(yu)繁(fan)殖(zhi)提(ti)供(gong)了(le)有(you)利(li)條(tiao)件(jian)。此(ci)外(wai),魚(yu)肉(rou)極(ji)易(yi)氧(yang)化(hua),以(yi)至(zhi)肉(rou)質(zhi)變(bian)壞(huai)、退色或變色。僅靠冷凍與冷藏的辦法對魚類產品的保鮮作用還不夠理想,若要取得更好的保鮮效果,可借鑒以下包裝措施。
(1)yuleidebaozhuangyingshiyonggangxingrongqi。yurouzuzhibenlaijiucuiruo,jingdongjiehou,yuneizuzhihuishoudaoyidingdeshanghai,baozhuangshiruoshoudaoguodudejiyajiuhuizaochengyutiposuiyijiyurouzuzhidejinyibushousun,zhebujinyingxiangdaowaiguan,erqiesunshangbuweiderouzhiyibianhuaiyingxiangshiyong。tongshi,sunshangbufenzaijiedongshi,xijunjiyizishengfanzhi。xianran,shiyongbuyiposun、不易塌陷的剛性包裝容器,有利於使魚類產品在運輸與搬運當中免遭各種機械損傷,從而保持原有的形態和品質。
(2)盡jin量liang減jian少shao魚yu類lei產chan品pin水shui分fen損sun失shi。魚yu肉rou不bu僅jin在zai凍dong結jie過guo程cheng中zhong水shui分fen有you所suo損sun失shi,而er且qie在zai冷leng藏zang中zhong因yin魚yu體ti表biao麵mian細xi小xiao冰bing晶jing的de升sheng華hua,也ye會hui使shi魚yu肉rou失shi掉diao水shui分fen,這zhe將jiang使shi魚yu肉rou不bu斷duan減jian重zhong並bing降jiang低di新xin鮮xian度du。同tong時shi,由you於yu魚yu體ti表biao麵mian水shui分fen蒸zheng發fa的de不bu斷duan深shen入ru,將jiang由you表biao及ji裏li形xing成cheng一yi定ding厚hou度du的de海hai綿mian層ceng,使shi魚yu肉rou失shi去qu原yuan有you的de味wei道dao和he營ying養yang成cheng分fen。因yin此ci,用yong具ju有you阻zu隔ge水shui蒸zheng汽qi性xing能neng的de包bao裝zhuang材cai料liao進jin行xing密mi封feng包bao裝zhuang,可ke以yi防fang止zhi魚yu肉rou在zai冷leng凍dong、冷leng藏zang及ji銷xiao售shou過guo程cheng中zhong的de水shui分fen散san失shi,從cong而er保bao持chi其qi原yuan有you的de鮮xian度du。須xu注zhu意yi的de是shi,包bao裝zhuang內nei所suo凍dong結jie的de魚yu類lei產chan品pin之zhi間jian存cun在zai著zhe多duo餘yu的de空kong隙xi,魚yu體ti的de水shui分fen易yi蒸zheng發fa,使shi魚yu肉rou脫tuo水shui,在zai包bao裝zhuang內nei部bu出chu現xian凝ning霜shuang。因yin此ci,應ying盡jin量liang減jian少shao包bao裝zhuang容rong器qi內nei部bu的de空kong隙xi。若ruo以yi塑su料liao薄bo膜mo袋dai包bao裝zhuang,則ze應ying使shi薄bo膜mo緊jin貼tie魚yu類lei產chan品pin。
(3)采cai用yong真zhen空kong包bao裝zhuang等deng防fang氧yang化hua手shou段duan。魚yu類lei產chan品pin含han有you不bu飽bao和he脂zhi肪fang酸suan,有you的de魚yu類lei含han量liang很hen高gao。當dang其qi氧yang化hua後hou會hui使shi魚yu肉rou變bian為wei褐he色se並bing變bian味wei。采cai用yong包bao裝zhuang處chu理li時shi加jia防fang氧yang化hua劑ji的de方fang法fa雖sui然ran有you一yi定ding的de效xiao果guo,但dan也ye會hui對dui肉rou質zhi產chan生sheng一yi定ding的de副fu作zuo用yong。而er采cai用yong真zhen空kong包bao裝zhuang則ze可ke取qu得de較jiao好hao的de保bao鮮xian效xiao果guo。魚yu的de真zhen空kong包bao裝zhuang須xu將jiang包bao裝zhuang容rong器qi內nei的de空kong氣qi抽chou出chu,因yin而er可ke使shi塑su料liao薄bo膜mo袋dai緊jin貼tie魚yu類lei產chan品pin,這zhe對dui減jian少shao包bao裝zhuang體ti積ji與yu內nei部bu空kong隙xi極ji為wei有you利li。為wei了le防fang氧yang化hua,真zhen空kong包bao裝zhuang必bi須xu采cai用yong透tou氧yang性xing低di的de包bao裝zhuang材cai料liao,並bing將jiang包bao裝zhuang容rong器qi嚴yan密mi封feng口kou,以yi隔ge絕jue包bao裝zhuang外wai部bu的de氧yang氣qi。
(4)製造“人造空氣”,防fang止zhi魚yu類lei產chan品pin的de氧yang化hua,抑yi製zhi細xi菌jun的de生sheng長chang和he繁fan殖zhi。所suo謂wei人ren造zao空kong氣qi,是shi指zhi增zeng加jia二er氧yang化hua碳tan或huo氮dan氣qi含han量liang的de空kong氣qi。如ru果guo將jiang魚yu類lei產chan品pin置zhi於yu二er氧yang化hua碳tan濃nong度du為wei10%的(de)空(kong)氣(qi)中(zhong),因(yin)其(qi)氧(yang)含(han)量(liang)相(xiang)對(dui)較(jiao)低(di),不(bu)僅(jin)可(ke)以(yi)提(ti)高(gao)低(di)溫(wen)冷(leng)藏(zang)效(xiao)果(guo),而(er)且(qie)在(zai)常(chang)溫(wen)條(tiao)件(jian)下(xia)也(ye)有(you)較(jiao)好(hao)的(de)保(bao)鮮(xian)效(xiao)果(guo)。在(zai)冷(leng)庫(ku)中(zhong),實(shi)現(xian)人(ren)工(gong)空(kong)氣(qi)的(de)環(huan)境(jing),需(xu)要(yao)大(da)型(xing)調(tiao)氣(qi)設(she)備(bei),其(qi)運(yun)轉(zhuan)成(cheng)本(ben)高(gao);而er在zai包bao裝zhuang容rong器qi內nei實shi現xian氣qi調tiao就jiu簡jian單dan多duo了le,僅jin需xu充chong氣qi包bao裝zhuang機ji,就jiu可ke將jiang包bao裝zhuang內nei的de空kong氣qi抽chou出chu一yi部bu分fen,再zai充chong入ru一yi種zhong或huo多duo種zhong保bao護hu性xing氣qi體ti。這zhe樣yang無wu論lun在zai冷leng藏zang還hai是shi在zai銷xiao售shou過guo程cheng中zhong,都dou能neng有you效xiao地di保bao護hu魚yu類lei產chan品pin的de品pin質zhi。
(5)避免紫外線照射。紫外線有促進魚類產品氧化的作用(如日光、燈光等都含有紫外線成分)binghuishiyuroushengwen,zhexiebuliyingxiangzaiyuleichanpinzhiyulengzangchenliezhongzhanxiaoyouweimingxian。duici,yuleichanpindebaozhuangkecaiyongbutoumingdecailiaolaifangzhiziwaixiandeqinru。ciwai,yinshuayoumokeyizuzhi90%紫外線的通過。所以,在透明材料表麵用油墨多印一些圖文之類,也可以起到遮光的作用。
小批量魚類的包裝
對於小批量、低產量的高檔水產品,開發其保鮮包裝更有價值。目前,國際上對水產品的保鮮包裝比較重視,新的保鮮包裝方法較多,現介紹如下:
(1) 魚類的保鮮方法。美國發明了一種魚類保鮮法:將剛捕到的魚裝入塑料袋,袋內注入混合氣體(其中二氧化碳60%、氧氣21%、氮氣19%),密封包好,然後將包裝好的鮮魚放入普通倉庫內。4個星期後,魚類的外觀和味道都沒有改變,就像剛捕到的一樣。
(2) 活(huo)魚(yu)罐(guan)頭(tou)。日(ri)本(ben)市(shi)場(chang)上(shang)新(xin)出(chu)現(xian)了(le)一(yi)種(zhong)活(huo)魚(yu)罐(guan)頭(tou),做(zuo)法(fa)是(shi)將(jiang)活(huo)魚(yu)用(yong)一(yi)種(zhong)麻(ma)醉(zui)液(ye)浸(jin)泡(pao)至(zhi)昏(hun)迷(mi)後(hou)裝(zhuang)入(ru)罐(guan)頭(tou),在(zai)兩(liang)天(tian)內(nei)不(bu)會(hui)死(si)。烹(peng)調(tiao)前(qian),隻(zhi)要(yao)取(qu)出(chu)罐(guan)頭(tou)內(nei)的(de)魚(yu)放(fang)入(ru)清(qing)水(shui)中(zhong),10分鍾左右魚就會蘇醒。這種活魚罐頭攜帶方便,清潔衛生,味道鮮美。
(3) yunsonghuoxiabaozhuang。ribenyanzhileyizhongyunsonghuoxiadezhuanmenbaozhuangrongqi,gaibaozhuangrongqiyongjuyixizuoneiceng,yongpaomojubenyixizuowaiceng,zailiangcengzhijianfangrusuibing。neicengyaofangzhiloushui,waicengyaofangzhipengsun。zaihuoxiahuodongdejuyixineicaoli,zhuangrushajunxiaodudehaishuibingguanruyidingliangdeyangqi,ranhouyonggaifengyan,jikeyunsong。caiyongzhezhongfangfa,jishizaiwaibuqiwengaoda40℃的條件下,在24小時內,活蝦的生存率還可保持在90%以上。
(4) mulibaoxianfa。mulishiyizhongjushiwenmingdemeiweihaixianshipin,danchushuihouhenkuaisiwang,qieyibeilisiteshijunwuranerbianzhifulan。xinxilanhaiyangyuyeyanjiusuodeyanjiurenyuanfamingleyizhongxingongyi,keshishengmulijiagonghoubianchengyizhongjinengchangqicunzhuyounengbaochiqixianwei。gaigongyishijianggangconghailibulaoshanglaidehuomulixijingnishahou,lijijinxingbashimiejun,wenduwei100℃,壓力為1.3kg/㎡,zheyangkeyishasifuzhezaimulikeneidexijun,ranhoujiangmiejunhoudemulijinxingzhenkonglvboxisubaozhuang,youyuzaijiayamiejunshimulikebingweidakai,guqizhongdexianzhiquanbubaoliuzaikenei。xiaofeizhegoumaihou,yongweibolujiare2~3分鍾,即可品嚐到美味的烤牡蠣。
