其工藝流程如下:原料選擇——水洗——破碎——磨碎過濾——兌漿——撇缸和坐缸——撇漿——起粉——幹燥
其生產過程如下:
(1)原料選擇:youyuhongshupinzhongbutong,qipinzhiyudianfenhanliangyebutong,jishitongyipinzhong,zaibutongchandi,qipinzhiyeyouhendachayi。yaoxuanzehaojiagongdianfendepinzhong,yaoqiudianfenhanlianggao,daibingdehongshubujinbushihezuodianfenjiagongyuanliao,erqiezaizhuzangzhonghuichuanrangeibiedeshukuai,yifashengfulanzaochengsunshi,yinciyaobabingshutichuganjing。
(2)水洗:將鮮薯倒入缸中加上清水,用人工進行翻洗,洗完後取出,瀝去餘水。
(3)破碎:瀝水後的鮮薯用破碎機打成碎塊,塊的大小為2厘米以下,以利於入磨。
(4)磨碎過濾:zheshihongshudianfenshengchandezhuyaohuanjie,yingxiangchanpinzhilianghedianfenchanchulv。jiangxianshusuikuaisongrushimohuojingangshamojiashuimochengshuhu,xianshuzhongliangyujiashuiliangdebiliwei1:3~3.5。再將薯糊傾入孔徑為60目的篩子中進行過濾。
(5)兌漿:經jing過guo濾lv得de到dao的de澱dian粉fen乳ru放fang入ru大da缸gang中zhong,隨sui即ji按an比bi例li加jia入ru酸suan漿jiang和he水shui調tiao整zheng澱dian粉fen乳ru的de酸suan度du和he濃nong度du。澱dian粉fen乳ru的de酸suan度du和he濃nong度du與yu澱dian粉fen和he蛋dan白bai質zhi的de沉chen澱dian有you密mi切qie關guan係xi。若ruo澱dian粉fen乳ru酸suan度du過guo大da,澱dian粉fen和he蛋dan白bai質zhi同tong時shi沉chen澱dian,使shi澱dian粉fen分fen離li不bu清qing。酸suan度du過guo小xiao,則ze蛋dan白bai質zhi和he澱dian粉fen均jun沉chen澱dian不bu好hao,呈cheng乳ru狀zhuang液ye,無wu法fa分fen離li。根gen據ju生sheng產chan經jing驗yan,酸suan漿jiang最zui佳jiapH值為3.6~4.0。大缸中澱粉乳濃度為3.5~4.0波美度,加入酸漿量為澱粉乳的2%,加酸漿後澱粉乳的pH值為5.6。若氣溫高,發酵快,酸漿用量可酌量減少。
(6)撇缸和坐缸:兌漿後約靜置20~30分鍾,使沉澱完成,即可進行撇缸。將上層清泔水及蛋白質、xianweiheshaoliangdianfendehunheyequchu,liuzaidicengdeweidianfen。zaipieganghoudedicengdianfenzhongjiashuihunhe,tiaochengdianfenru,shidianfenzaichendian。zaichendianguochengzhongqisuanjiangfajiaozuoyong,chengzuogang。zuogangshiyingkongzhiwenduheshijian。zuogangwenduwei20sheshiduzuoyou。zaitianlengshibixubaowenhuozaijiashuihunshikeyongreshui。zuogangfajiaobixufatou,zaifajiaoguochengzhongshidangdijiaoban,cushifajiaowancheng。yibanzuogangshijianwei24小時,天熱可相應縮短一些時間。發酵完畢,澱粉沉澱。
(7)撇漿過濾:坐zuo缸gang所suo生sheng成cheng的de酸suan漿jiang稱cheng為wei二er和he漿jiang,即ji酸suan漿jiang法fa中zhong主zhu要yao使shi用yong的de酸suan漿jiang。發fa酵jiao正zheng常chang的de酸suan漿jiang有you清qing香xiang味wei,漿jiang色se潔jie白bai如ru牛niu奶nai。若ruo發fa酵jiao不bu足zu或huo發fa酵jiao過guo頭tou的de酸suan漿jiang,色se澤ze和he香xiang味wei均jun差cha,供gong兌dui漿jiang用yong時shi效xiao果guo不bu好hao。撇pie漿jiang即ji是shi將jiang上shang層ceng酸suan漿jiang撇pie出chu作zuo為wei兌dui漿jiang之zhi用yong。撇pie漿jiang後hou的de澱dian粉fen用yong篩shai孔kong為wei120的細篩進行篩分。篩上物為細渣,可作飼料。篩下物為澱粉,轉入小缸。澱粉轉入小缸後,加水漂洗澱粉,約需放置24小時,防止出現發酵現象。
(8)起粉:dianfenzaixiaogangzhongchendianhou,shangcengyetiweixiaojiang,keyusuanjiangpeiheshiyong,huozuoweimosuiyongshui。piequxiaojianghou,zaidianfenbiaomianliuyouyicenghuibaideyoufen,xihanyoudanbaizhidebuchundianfen。youfenkeyongshuicongdianfenbiaomianxiqu,xichuyekezuoweipeiyangsuanjiangdeyingyangwuliao,dicengdianfenyongchanziquchu,dianfendibukenengyouxishazhanfu,yingjiangqishuaqu。
(9)幹燥:經過上述流程,獲得濕澱粉。為了便於貯藏和運輸必須進行幹燥。一般采用日光曬幹或送入烘房烘幹。
