采(cai)用(yong)烘(hong)房(fang)生(sheng)產(chan)脫(tuo)水(shui)菠(bo)菜(cai)時(shi),將(jiang)經(jing)過(guo)燙(tang)漂(piao)的(de)菠(bo)菜(cai)瀝(li)去(qu)過(guo)多(duo)的(de)水(shui)分(fen),攤(tan)放(fang)在(zai)烘(hong)盤(pan)中(zhong),置(zhi)於(yu)烘(hong)架(jia)上(shang)。每(mei)個(ge)烘(hong)盤(pan)的(de)裝(zhuang)菜(cai)量(liang)以(yi)不(bu)影(ying)響(xiang)烘(hong)盤(pan)間(jian)的(de)空(kong)氣(qi)流(liu)通(tong)為(wei)度(du)。烘(hong)房(fang)內(nei)保(bao)持(chi)75~80℃的恒溫,經3~4小時可完成幹燥。在接近幹燥時,將溫度降低至50~60℃,使稍稍回軟,以以利壓塊包裝。每100千克鮮菠菜克製成8千克脫水菠菜。脫水菠菜的含水量對貯藏效果影響很大,在不損害製品質量的條件下,含水量越低,貯藏效果越好。
