卷邊損傷——卷邊部位外表的損傷或塗層的脫落,原因是一道封口輪曲線不合理,一道或二道封口輪 卷封曲麵的光潔度低或輪調整緊等。?
(2)玻璃瓶封口不嚴的原因:進瓶轉盤與護瓶架之間的間隙大小不均或整機動作不協調而引起破瓶。搓擰皮帶帶速過大使瓶口壓破或帶速過小使瓶蓋密封不嚴等。?
(3)熱封袋口密封不牢或封口處於燒穿或破損的原因:前者主要是由於封口溫度太低或封口壓力及熱封時間不夠;袋口有雜物使封口不牢;熱封器粘結熔化了的塑料;製袋時成形器與材料沒有對中,使袋接縫邊沒有對齊。後者主要是熱封時間過長或溫度過高或壓力過大所引起。?
殺菌工序?
罐頭食品殺菌的目的是殺死對食品起敗壞作用和產毒的微生物,殺菌時要盡量做到保存食品原有的色澤、風味、質地及營養價值。如果殺菌不徹底,罐頭內的微生物在條件適宜生長時,就會大量繁殖,使食品敗壞。?
罐頭殺菌常采用熱殺菌法——將產品加熱到一定溫度,保持一定時間,以殺滅其中的細菌。
熱源多采用蒸汽或熱水,殺菌時必須使每個罐頭都能直接與熱源接觸。影響殺菌效果的因素很多,主要有以下幾點:罐頭殺菌公式不當(溫度或時間達不到要求);蒸汽殺菌排氣不充分或熱水殺菌對流效果不好等原因造成殺菌鍋內產生冷點;含(han)湯(tang)汁(zhi)食(shi)品(pin),固(gu)形(xing)物(wu)含(han)量(liang)過(guo)高(gao)會(hui)影(ying)響(xiang)罐(guan)內(nei)的(de)對(dui)流(liu)傳(chuan)熱(re)效(xiao)果(guo)或(huo)罐(guan)內(nei)充(chong)填(tian)太(tai)滿(man)使(shi)頂(ding)隙(xi)氣(qi)體(ti)的(de)攪(jiao)拌(ban)功(gong)能(neng)受(shou)影(ying)響(xiang)。初(chu)溫(wen)過(guo)低(di)會(hui)延(yan)長(chang)罐(guan)頭(tou)達(da)到(dao)殺(sha)菌(jun)效(xiao)果(guo)所(suo)需(xu)時(shi)間(jian),使(shi)殺(sha)菌(jun)公(gong)式(shi)不(bu)合(he)適(shi)。罐(guan)頭(tou)殺(sha)菌(jun)的(de)高(gao)溫(wen)會(hui)使(shi)底(di)蓋(gai)膠(jiao)圈(quan)暫(zan)時(shi)軟(ruan)化(hua),當(dang)殺(sha)菌(jun)結(jie)束(shu)後(hou)罐(guan)頭(tou)內(nei)冷(leng)卻(que)形(xing)成(cheng)真(zhen)空(kong)時(shi),有(you)可(ke)能(neng)吸(xi)進(jin)少(shao)量(liang)冷(leng)卻(que)水(shui),特(te)別(bie)是(shi)當(dang)卷(juan)邊(bian)質(zhi)量(liang)不(bu)好(hao)時(shi),就(jiu)會(hui)出(chu)現(xian)微(wei)泄(xie)漏(lou)。食(shi)品(pin)的(de)性(xing)質(zhi)和(he)化(hua)學(xue)成(cheng)分(fen)是(shi)殺(sha)菌(jun)時(shi)微(wei)生(sheng)物(wu)存(cun)在(zai)的(de)環(huan)境(jing)條(tiao)件(jian),食(shi)品(pin)的(de)酸(suan)、糖、蛋白質、油脂、鹽類等都能影響微生物的耐熱性。其它因素如食品的phzhidi,yannongdugao,yaxiaosuanyanjiyoujisuandecunzaikezengqiangshajunderexiaoguo。ergaonongdudetangyeduixijunyabaoyoubaohuzuoyong,shipinkuaizhuangdaxiao,guxingwuhanlianggaodi,zhuangguanfangshidengdouhuiyingxiangguanneidechuanre。shajunshiguanneiweishengwuwuranchengdugao,youyinshajunhouguanneiweishengwucanliuliangyuchushijunshuchengzhengbi,caiyongtongyishajuntiaojianhou,guanneixijunhanlianggao,zecancunshuyegao,jiuhuishiguantoudabudaoshangyewujunyaoqiu。
冷卻工序

非(fei)常(chang)壓(ya)殺(sha)菌(jun)後(hou)的(de)罐(guan)頭(tou),由(you)於(yu)殺(sha)菌(jun)時(shi)罐(guan)內(nei)食(shi)品(pin)因(yin)高(gao)溫(wen)而(er)膨(peng)脹(zhang),罐(guan)內(nei)壓(ya)力(li)顯(xian)著(zhu)增(zeng)加(jia),如(ru)果(guo)殺(sha)菌(jun)完(wan)畢(bi)後(hou)迅(xun)速(su)恢(hui)複(fu)常(chang)壓(ya),就(jiu)會(hui)使(shi)內(nei)壓(ya)過(guo)大(da)而(er)造(zao)成(cheng)罐(guan)的(de)變(bian)形(xing)或(huo)破(po)裂(lie),影(ying)響(xiang)罐(guan)頭(tou)密(mi)封(feng)性(xing)能(neng)。因(yin)此(ci),對(dui)這(zhe)類(lei)罐(guan)頭(tou)要(yao)采(cai)用(yong)加(jia)壓(ya)冷(leng)卻(que),即(ji)反(fan)壓(ya)冷(leng)卻(que),使(shi)殺(sha)菌(jun)鍋(guo)內(nei)的(de)壓(ya)力(li)稍(shao)大(da)於(yu)罐(guan)內(nei)壓(ya)力(li),等(deng)到(dao)罐(guan)頭(tou)內(nei)容(rong)物(wu)充(chong)分(fen)冷(leng)卻(que),內(nei)壓(ya)緩(huan)和(he)時(shi),就(jiu)不(bu)致(zhi)發(fa)生(sheng)膨(peng)脹(zhang)或(huo)破(po)裂(lie)。加(jia)壓(ya)冷(leng)卻(que)可(ke)利(li)用(yong)蒸(zheng)氣(qi)加(jia)壓(ya)冷(leng)卻(que)或(huo)利(li)用(yong)空(kong)氣(qi)加(jia)壓(ya)冷(leng)卻(que)或(huo)及(ji)時(shi)將(jiang)冷(leng)水(shui)打(da)入(ru)殺(sha)菌(jun)鍋(guo)內(nei)冷(leng)卻(que)。?
