俗(su)話(hua)說(shuo)萬(wan)事(shi)開(kai)頭(tou)難(nan)。我(wo)們(men)場(chang)所(suo)對(dui)過(guo)敏(min)原(yuan)控(kong)製(zhi)的(de)第(di)一(yi)步(bu)通(tong)常(chang)就(jiu)走(zou)歪(wai)了(le)。即(ji)便(bian)我(wo)們(men)後(hou)麵(mian)做(zuo)很(hen)多(duo)努(nu)力(li)去(qu)補(bu)救(jiu),通(tong)常(chang)也(ye)會(hui)顧(gu)此(ci)失(shi)彼(bi),漏(lou)洞(dong)百(bai)出(chu),甚(shen)至(zhi)可(ke)能(neng)南(nan)轅(yuan)北(bei)轍(zhe)。我(wo)們(men)想(xiang)做(zuo)好(hao)過(guo)敏(min)原(yuan)控(kong)製(zhi)的(de)第(di)一(yi)步(bu)。首(shou)先(xian)要(yao)考(kao)慮(lv)場(chang)所(suo)內(nei)所(suo)適(shi)用(yong)國(guo)家(jia)的(de)過(guo)敏(min)原(yuan)控(kong)製(zhi)的(de)法(fa)律(lv)法(fa)規(gui)。我(wo)這(zhe)裏(li)隻(zhi)以(yi)歐(ou)盟(meng)的(de)法(fa)規(gui)為(wei)範(fan)例(li)。
首先你要拿到以下這個歐盟適用的《主要致敏物聲稱指南》。對場所內的所有原料,輔料,添加劑要知道其組成成分,如果有可能的話最好還要知道其所占的比例。然後按照《主要致敏物聲稱指南》的要求一一對我們原料,輔料,添加劑的組成成分進行比照識別。否則我們第一步走歪了,後麵走的路全是歪的。大家要切記切記。
這裏我以雞精為例。通常這裏我們需要看所有物料的配料表。含有味精,食用鹽,雞肉/雞骨提取物,呈味核苷酸二鈉,醬油,雞蛋.那麼在這裏我們按照《主要致敏物聲稱指南》進行識別其中的醬油和雞蛋成分應該符合過敏原的要求。依此類推。我們把場所內所有的物料都一一識別完畢。

而說到工廠的實際控製我是按照工廠的產品複雜性來進行分析的。我將產品複雜性分成了幾種不同的狀況。
1、第一種情況你工廠按照BRCxiangguandefaguiduizhaohou,meiyourenheguominyuan。danzheyangbudaibiaomeiyourenheguominyuanwurandeqingkuang。suiranzhezhonglilunshangwurandefengxianbijiaodi,zhongguonanfangyouxiexiaogongchangyuangongdoushizaichejianlimianchidongxide,baokuogongrenbayixiechidedongxidairudaochejian。baokuoshuerzhandeyouershiyongmantou,huasheng,huotuichangbingbuxianjian。zhexiedoushiguominyuan。suoyizheyikuaijishixianchangshengchandechanpinbubaohanguominyuan,danduixiangguanyuangongjiwailairenyuandeguominyuanpeixunrengshibibukeshaode。BRC第七版中將第六版中的5.2.9提到7版中的7.1.4強調的就是場所內所有的活動人員都要接受BRC培訓就是這個意思。7.1.4適用於我下麵提到的任何一種情況。這種情況下除了培訓在生產中不需要進行過多的過敏原控製。
2、第二種情況就是生產產品相對單一,全年隻生產一種產品,你像不添加任何添加劑(舉例純烘烤花生),添加不含過敏原的添加劑(鹽焗花生)以及會一直固定添加含一種或多種過敏原的添加劑(舉例隻生產加香油和醬油大豆蛋白的春卷)。包括當天的返工品都用於同一批次的生產,那麼這種情況下的過敏原控製和追溯也相對比較簡單。不用做過多的控製。
3、第三種情況就是這個工廠生產的產品相對仍然比較單一。但是是季節性生產,舉個例子3-4月生產草莓,4-5月生產杏,6-9月生產毛豆(本來想舉黃桃,但黃桃在日本僅作為推薦性過敏原,並非作為強製過敏原) 10-來年2月生產梨。這裏麵毛豆也有點爭議,毛豆又叫日本菜豆,英文名edamame,有的審核員不作為過敏原。但先前我記得看過一個歐洲文獻把edamame劃類到soybean裏li麵mian,所suo以yi其qi應ying該gai被bei視shi為wei過guo敏min原yuan。雖sui然ran判pan定ding為wei過guo敏min原yuan,我wo們men可ke以yi看kan出chu這zhe個ge工gong廠chang的de生sheng產chan非fei常chang有you規gui律lv。都dou是shi一yi段duan一yi段duan的de,中zhong間jian衛wei生sheng打da掃sao徹che底di,倉cang庫ku的de標biao示shi分fen區qu做zuo好hao,也ye不bu會hui存cun在zai過guo敏min原yuan交jiao叉cha汙wu染ran的de狀zhuang況kuang。所suo以yi這zhe個ge工gong廠chang的de過guo敏min原yuan控kong製zhi也ye不bu存cun在zai太tai大da的de問wen題ti。
4、第(di)四(si)種(zhong)狀(zhuang)況(kuang),生(sheng)產(chan)產(chan)品(pin)仍(reng)然(ran)比(bi)較(jiao)單(dan)一(yi),舉(ju)例(li)生(sheng)產(chan)的(de)產(chan)品(pin)中(zhong)有(you)加(jia)香(xiang)油(you)的(de)春(chun)卷(juan),有(you)不(bu)加(jia)香(xiang)油(you)的(de)春(chun)卷(juan)。這(zhe)樣(yang)的(de)情(qing)況(kuang)除(chu)了(le)考(kao)慮(lv)生(sheng)產(chan)計(ji)劃(hua)的(de)安(an)排(pai)先(xian)生(sheng)產(chan)不(bu)含(han)過(guo)敏(min)原(yuan)的(de)產(chan)品(pin),再(zai)生(sheng)產(chan)不(bu)含(han)過(guo)敏(min)原(yuan)的(de)產(chan)品(pin),還(hai)要(yao)在(zai)產(chan)品(pin)轉(zhuan)換(huan)或(huo)班(ban)後(hou)徹(che)底(di)打(da)掃(sao)衛(wei)生(sheng)的(de)要(yao)求(qiu)。另(ling)外(wai)香(xiang)油(you)的(de)盛(sheng)放(fang)桶(tong)等(deng)容(rong)器(qi)及(ji)操(cao)作(zuo)工(gong)人(ren)的(de)防(fang)護(hu)服(fu)最(zui)好(hao)也(ye)都(dou)是(shi)要(yao)有(you)兩(liang)套(tao)防(fang)止(zhi)交(jiao)叉(cha)汙(wu)染(ran)。必(bi)要(yao)時(shi)也(ye)要(yao)采(cai)用(yong)ELISA, PH, 微生物塗抹等措施來驗證清洗效果的有效性。
5、dangnishengchandechanpinbijiaofuza,erqieyitianyaoduocigenghuanchanpinzhonglei,zheyangdeqingkuangxiachedidasaoweishengjibenbudaxianshi。nameruguokeyizaibutongdeshengchanquhuobutongdeshengchanxianshengchanbuhuizaochengjiaochawurandehua,keyijianyifenkaibutongdeshengchanquyushengchan,youqishiyoukongqipiaoyideqingkuangcunzai(比如粉類的過敏原,麵粉,大豆蛋白等)。
6、當你的生產產品比較複雜,一天要更換幾十種甚至上百種產品種類(餅幹類產品,烘焙類產品),shengchanchejiandefengehuozheshengchanxiandegelidoubutaixianshi,shenzhiyoushihaihuiyudaoyixiebiantaidaochaoshiqubanidebingganniedexisui,huozhejiyaposuidechanpinxiaofeizheyibanshibuhuigoumaide。namehuiliudaogongchanganzhaoyidingbilizaicitianjiadaochanpinzhong。erqiezheleishengchangongchangyibandasaoweishengdeshihouyebuyunxushiyongshuilaiqingxi。nameqiguominyuandekongzhishibibuhuitebiehao,shenzhikeyishuoyitahutu。namezuihoutamenzhishengyitiaokeyigan。najiushibudeyizaichanpinshangbiaoshibenchanpinkenenghanyouweiliangde...成分,或者本生產線生產本產品的時候還生產...其他產品。所以這一類產品的過敏源控製給我的印象即使控製,最終還是不能完美控製。交叉汙染也是不可避免的。
我們再來看一下這幾年炒熱的國外過敏原事件,通常吸引我們眼球的都是五眼聯盟(即所謂的英美加澳新)guojiabaochulaide。suoweidehaibawangjiaoziweizuoguominyuanbiaoshi,laoganmazaiaodaliyayinweibiaoqianweibiaozhuchanpinzhonghanyouguominyuanchengfenbeixiajia,dengdeng,tongchangwentidebiaozhengdouxianxianzaibiaoqianshang。

想做好過敏原宏觀的控製還有三點我想強調。
第(di)一(yi)點(dian)就(jiu)是(shi)要(yao)做(zuo)好(hao)溝(gou)通(tong)工(gong)作(zuo),對(dui)於(yu)產(chan)品(pin)中(zhong)所(suo)含(han)過(guo)敏(min)原(yuan)信(xin)息(xi)的(de)變(bian)更(geng)都(dou)要(yao)充(chong)分(fen)的(de)與(yu)上(shang)級(ji),平(ping)級(ji),下(xia)級(ji)及(ji)時(shi)的(de)做(zuo)好(hao)報(bao)聯(lian)相(xiang)工(gong)作(zuo)。而(er)當(dang)有(you)信(xin)息(xi)變(bian)更(geng)不(bu)及(ji)時(shi)溝(gou)通(tong)便(bian)是(shi)問(wen)題(ti)即(ji)將(jiang)發(fa)生(sheng)之(zhi)時(shi)。
第二點由於我國在引入HACCP體係時漏掉了食品級潤滑油這一個項目,所以對食品級潤滑油的監管在中國的HACCP體係被誤入到食品添加劑一類。但是食品添加劑的標準中本身又對食品級潤滑油又未進行分析。所以導致我們的HACCP體係中竟然對潤滑油的解釋有食用油脂。具體可參見GB14881-2013, 而er食shi用yong油you脂zhi如ru花hua生sheng油you,大da豆dou油you,色se拉la油you通tong常chang都dou是shi過guo敏min原yuan。先xian且qie不bu論lun是shi不bu是shi過guo敏min源yuan,即ji使shi忽hu略lve過guo敏min原yuan,專zhuan業ye潤run滑hua油you的de耐nai高gao溫wen,耐nai低di溫wen,潤run滑hua效xiao果guo也ye都dou是shi食shi品pin油you脂zhi所suo不bu能neng企qi及ji的de。回hui過guo頭tou來lai食shi用yong油you脂zhi所suo帶dai來lai的de過guo敏min原yuan風feng險xian有you幾ji個ge企qi業ye分fen析xi過guo其qi中zhong的de風feng險xian了le?
第三點就是倉儲的管理。倉儲的管理大家都如數家珍.離(li)牆(qiang)離(li)地(di),專(zhuan)庫(ku)存(cun)放(fang),賬(zhang)務(wu)卡(ka)相(xiang)符(fu),分(fen)區(qu)管(guan)理(li),防(fang)塵(chen)防(fang)潮(chao)防(fang)火(huo)防(fang)盜(dao)。但(dan)是(shi)實(shi)際(ji)上(shang)對(dui)過(guo)敏(min)源(yuan)物(wu)料(liao)的(de)管(guan)理(li)如(ru)果(guo)能(neng)按(an)照(zhao)這(zhe)些(xie)基(ji)本(ben)原(yuan)則(ze)控(kong)製(zhi),實(shi)際(ji)上(shang)也(ye)不(bu)存(cun)在(zai)什(shen)麼(me)問(wen)題(ti)。而(er)工(gong)廠(chang)的(de)實(shi)際(ji)狀(zhuang)況(kuang)連(lian)倉(cang)管(guan)都(dou)說(shuo)不(bu)清(qing)楚(chu)哪(na)些(xie)是(shi)過(guo)敏(min)原(yuan),哪(na)些(xie)不(bu)是(shi)過(guo)敏(min)原(yuan)。交(jiao)叉(cha)汙(wu)染(ran)無(wu)處(chu)不(bu)在(zai)。想(xiang)要(yao)控(kong)製(zhi)好(hao)過(guo)敏(min)原(yuan)真(zhen)是(shi)無(wu)從(cong)談(tan)起(qi)。
所(suo)以(yi)大(da)家(jia)不(bu)要(yao)上(shang)來(lai)就(jiu)問(wen)我(wo)如(ru)何(he)進(jin)行(xing)過(guo)敏(min)原(yuan)控(kong)製(zhi),這(zhe)個(ge)範(fan)圍(wei)真(zhen)的(de)太(tai)大(da),而(er)且(qie)很(hen)多(duo)企(qi)業(ye)連(lian)我(wo)說(shuo)的(de)頭(tou)兩(liang)步(bu)都(dou)做(zuo)不(bu)到(dao),想(xiang)做(zuo)好(hao)過(guo)敏(min)原(yuan)控(kong)製(zhi)真(zhen)的(de)是(shi)無(wu)本(ben)之(zhi)源(yuan)。真(zhen)心(xin)想(xiang)控(kong)製(zhi)好(hao),還(hai)是(shi)要(yao)從(cong)第(di)一(yi)步(bu)切(qie)切(qie)實(shi)實(shi)的(de)行(xing)動(dong)起(qi)來(lai)。
