我(wo)國(guo)茶(cha)類(lei)眾(zhong)多(duo),對(dui)鮮(xian)葉(ye)的(de)要(yao)求(qiu)各(ge)不(bu)一(yi)樣(yang)。對(dui)綠(lv)茶(cha)而(er)言(yan),茶(cha)葉(ye)采(cai)摘(zhai)標(biao)準(zhun)的(de)確(que)定(ding)涉(she)及(ji)的(de)因(yin)素(su)較(jiao)多(duo),但(dan)總(zong)的(de)說(shuo)來(lai),主(zhu)要(yao)根(gen)據(ju)茶(cha)類(lei)加(jia)工(gong)對(dui)鮮(xian)葉(ye)的(de)嫩(nen)度(du)與(yu)品(pin)質(zhi)的(de)要(yao)求(qiu),並(bing)考(kao)慮(lv)茶(cha)樹(shu)新(xin)梢(shao)生(sheng)長(chang)的(de)生(sheng)物(wu)學(xue)特(te)性(xing)和(he)產(chan)量(liang)因(yin)素(su)進(jin)行(xing)確(que)定(ding)。現(xian)將(jiang)無(wu)公(gong)害(hai)綠(lv)茶(cha)采(cai)摘(zhai)、運輸與手工加工技術淺談如下:一、綠茶采摘技術
1、采(cai)摘(zhai)和(he)留(liu)養(yang)相(xiang)結(jie)合(he)。茶(cha)葉(ye)葉(ye)片(pian)是(shi)光(guang)合(he)作(zuo)用(yong)的(de)主(zhu)要(yao)器(qi)官(guan),茶(cha)樹(shu)上(shang)留(liu)有(you)適(shi)量(liang)並(bing)配(pei)置(zhi)合(he)理(li)的(de)成(cheng)熟(shu)葉(ye)片(pian),是(shi)維(wei)持(chi)茶(cha)葉(ye)產(chan)量(liang)和(he)質(zhi)量(liang)的(de)重(zhong)要(yao)基(ji)礎(chu)。為(wei)此(ci),在(zai)茶(cha)葉(ye)采(cai)摘(zhai)的(de)同(tong)時(shi),要(yao)注(zhu)意(yi)適(shi)當(dang)預(yu)留(liu)新(xin)葉(ye),應(ying)保(bao)證(zheng)每(mei)年(nian)有(you)一(yi)批(pi)新(xin)生(sheng)的(de)葉(ye)片(pian)留(liu)在(zai)茶(cha)樹(shu)上(shang),待(dai)其(qi)成(cheng)熟(shu)後(hou)形(xing)成(cheng)主(zhu)要(yao)的(de)營(ying)養(yang)物(wu)質(zhi)合(he)成(cheng)場(chang)所(suo)。當(dang)前(qian)我(wo)國(guo)名(ming)優(you)茶(cha)暢(chang)銷(xiao),一(yi)般(ban)應(ying)在(zai)春(chun)茶(cha)期(qi)間(jian)盡(jin)可(ke)能(neng)多(duo)采(cai)名(ming)優(you)茶(cha)鮮(xian)葉(ye)原(yuan)料(liao),夏(xia)、秋(qiu)茶(cha)可(ke)適(shi)當(dang)采(cai)摘(zhai)名(ming)優(you)茶(cha)或(huo)大(da)宗(zong)茶(cha)原(yuan)料(liao),但(dan)應(ying)到(dao)夏(xia)茶(cha)留(liu)一(yi)葉(ye)采(cai),秋(qiu)茶(cha)適(shi)當(dang)留(liu)葉(ye)。高(gao)山(shan)茶(cha)園(yuan)或(huo)低(di)丘(qiu)生(sheng)長(chang)不(bu)良(liang)的(de)茶(cha)園(yuan),春(chun)茶(cha)後(hou)期(qi)就(jiu)應(ying)留(liu)葉(ye)采(cai),夏(xia)、秋茶少采或不采,要提早封園,集中留養。
2、采(cai)摘(zhai)時(shi)要(yao)產(chan)量(liang)和(he)質(zhi)量(liang)兼(jian)顧(gu)。在(zai)茶(cha)葉(ye)采(cai)摘(zhai)時(shi),要(yao)強(qiang)調(tiao)鮮(xian)葉(ye)質(zhi)量(liang)和(he)數(shu)量(liang)相(xiang)結(jie)合(he),嚴(yan)格(ge)采(cai)摘(zhai)標(biao)準(zhun),防(fang)止(zhi)鮮(xian)葉(ye)汙(wu)染(ran)和(he)變(bian)質(zhi),保(bao)證(zheng)成(cheng)茶(cha)品(pin)質(zhi)和(he)滿(man)足(zu)市(shi)場(chang)對(dui)茶(cha)葉(ye)的(de)數(shu)量(liang)要(yao)求(qiu)。
3、茶葉采摘要因地、因yin需xu製zhi宜yi。栽zai種zhong的de品pin種zhong和he施shi肥fei水shui平ping不bu同tong,茶cha園yuan環huan境jing和he氣qi候hou條tiao件jian不bu一yi樣yang,導dao致zhi茶cha園yuan中zhong茶cha樹shu生sheng長chang狀zhuang況kuang差cha異yi較jiao大da,同tong時shi不bu同tong茶cha類lei對dui鮮xian葉ye原yuan料liao要yao求qiu也ye不bu一yi樣yang。因yin此ci,茶cha葉ye采cai摘zhai標biao準zhun、數量和采摘方式應根據茶樹生長狀況和所加工茶類對鮮葉要求的不同而有所區別,要因地、因時、yinjiagongchaleihejibiexuyaobutongerlinghuozhangwo。ruduiyoulingzhongzhongxiujianchayuan,zaiyidingshijianneiyaocaiyongdadingcai,duishushijiaoruodechayuankeshidangduoliuyeyanghu,erduishengchanglianghaodechayuan,zekejinxingzhengchangcaizhai。
二、鮮xian葉ye運yun輸shu技ji術shu要yao點dian鮮xian葉ye是shi形xing成cheng茶cha葉ye品pin質zhi的de基ji礎chu,除chu茶cha葉ye加jia工gong技ji術shu外wai,茶cha葉ye質zhi量liang主zhu要yao取qu決jue於yu鮮xian葉ye質zhi量liang的de高gao低di,做zuo好hao鮮xian葉ye采cai摘zhai後hou的de運yun輸shu,是shi保bao證zheng為wei無wu公gong害hai茶cha葉ye加jia工gong提ti供gong高gao質zhi量liang鮮xian葉ye原yuan料liao的de基ji礎chu條tiao件jian之zhi一yi,應ying引yin起qi高gao度du重zhong視shi。
在zai進jin行xing手shou工gong鮮xian葉ye采cai摘zhai時shi,要yao求qiu盛sheng裝zhuang鮮xian葉ye的de容rong器qi是shi可ke透tou氣qi的de竹zhu籃lan或huo竹zhu筐kuang,不bu允yun許xu使shi用yong塑su料liao袋dai或huo尼ni龍long編bian織zhi袋dai一yi類lei的de不bu透tou氣qi容rong器qi盛sheng裝zhuang鮮xian葉ye,以yi免mian鮮xian葉ye受shou悶men發fa熱re變bian質zhi,尤you其qi是shi名ming優you茶cha鮮xian葉ye的de采cai摘zhai更geng要yao注zhu意yi這zhe一yi點dian。用yong機ji械xie進jin行xing鮮xian葉ye采cai摘zhai時shi,從cong采cai茶cha機ji上shang卸xie下xia的de裝zhuang滿man鮮xian葉ye的de盛sheng葉ye袋dai,應ying及ji時shi轉zhuan移yi到dao陰yin涼liang的de存cun放fang處chu,避bi免mian陽yang光guang長chang時shi間jian曝pu曬shai引yin起qi鮮xian葉ye變bian質zhi。
鮮葉采摘後,有的是直接送往茶葉加工廠,並由茶廠設專職驗收員對鮮葉進行驗收,然後統一進行貯存付製;但有的茶廠,鮮葉的過秤、驗收是在茶園中進行的,即直接到茶園收購鮮葉,再送回茶廠驗收,均應做到鮮葉驗收、運輸過程中,不直接接觸地麵,以免受到地麵微生物的汙染,在茶園進行鮮葉驗收時,鮮葉過秤、驗收處應設在遮陰的地方,避免陽光直射。經驗收、過秤收進的鮮葉,一定要用透氣竹筐存放,竹筐的大小要與運輸車貨箱相匹配。
三、無公害綠茶手工加工技術要點首先,應要求手工名優茶加工有一個衛生的加工環境,加工場所要相對獨立,與家畜欄舍、廁所、糞坑等應有一定安全距離,以防止異味汙染茶葉。其次,手工製茶要有專門的加工間,不得與廚房、zhurenfangjiandenghunyong。chaochajianyaoqiucaiguanghetongfenglianghao,fangdingheqiangmianfenshuaqingjieweisheng,dimianguanghuabuqihuichen。chaozhijianyingzugoukuanchang,chukeyibaifangchaochaguohexiangguanyongju,yijiliuyouchaozhirenyuandecaozuokongjianwai,haiyingyouzugoudexianyetanfangmianji。jiagongjianbuyunxuyujiagongwuguanderenyuansuibianchuru,gengbuyunxuertongsuibianjinruwanshua,yifangzhiduichayezaochengwuran。jiagongjianneibudeduifangyuchayejiagongwuguandewupin,gengbudeduifanghuidaozhichayeshouwurandewupin。
wugonghaishougongmingchajiagongsuoyongxianyeyouyujiaoxinen,gucaizhaiyaoqiugengweijingxi。yaoqiangtiaoshiyongzhuzhichalanshengfangxianye,buzhunyongsuliaodaidengyimenshangxianyedeyongju。xianyecaixiahouyaojishisongwangjiagongjiantanliang,fangzhifare、變質,鮮葉一定要攤放在篾簟,不能將鮮葉直接攤放在地麵上。
手工炒製所使用的鍋灶和用具應專用,最好使用以電、shiyouyehuaqidengweireyuandezhuanyongchaochaguo。muqianbufenchaquyoushiyongyimutanweiranliaodeshougongchaochaguo,yingzhuyizaitianjiamutanheqinghuishi,bimianduichayezaochengwuran,budeyongshaofanguojinxingchayechaozhi,suoshiyongdezhubiankuang、匾也應專用。每天工作結束應及時清潔炒茶鍋及用具,茶季結束後應對炒茶鍋進行全麵保養。在對電熱絲進行檢查、weixiuhegenghuanbingjiangguobicashiqingjiehou,haiyaojietongdianyuanduichaochaguojiarebingzaiguobishangjunyuntushangshaoliangzhichazhuanyongyou,ranhouyongsuliaobufugai,zhiyuganzaochubaoguan,yifangchaochaguoshengxiueryingxianglainiandechaozhi。shougongchaozhishiyongdezhichazhuanyongyou,yaoqiuwuse、無味、無毒、擦試鍋壁後炒製的茶葉衝泡不會產生油花。
