綠豆粉皮是用綠豆澱粉製做而成的傳統食品,加工工藝及使用工具都比較簡單,適宜於個體家庭製做。其製作方法是:
1. 調糊:取含水量45%~50%的潮澱粉,徐徐加入粉量2.5倍的冷水,並用木棒不斷的攪拌,至使粘性、彈力均勻一致。
2.成型:將(jiang)旋(xuan)盤(pan)放(fang)入(ru)開(kai)水(shui)鍋(guo)中(zhong),用(yong)粉(fen)勺(shao)取(qu)調(tiao)好(hao)的(de)粉(fen)糊(hu)少(shao)許(xu),倒(dao)入(ru)旋(xuan)盤(pan)內(nei),並(bing)用(yong)手(shou)撥(bo)動(dong)旋(xuan)轉(zhuan),使(shi)粉(fen)糊(hu)受(shou)到(dao)離(li)心(xin)力(li)的(de)作(zuo)用(yong)由(you)盤(pan)中(zhong)心(xin)向(xiang)四(si)周(zhou)均(jun)勻(yun)地(di)攤(tan)開(kai),同(tong)時(shi)受(shou)熱(re)糊(hu)化(hua)成(cheng)型(xing)。待(dai)中(zhong)心(xin)沒(mei)有(you)白(bai)點(dian)時(shi),連(lian)盤(pan)取(qu)出(chu),置(zhi)於(yu)清(qing)水(shui)中(zhong),冷(leng)卻(que)片(pian)刻(ke)後(hou)將(jiang)成(cheng)型(xing)的(de)粉(fen)皮(pi)脫(tuo)出(chu)放(fang)在(zai)清(qing)水(shui)中(zhong)冷(leng)卻(que)。
3.攤晾:先將水粉皮用製澱粉時的酸漿浸3~5fenzhong,bujinkeyituoqubufensesuhebiaomiandezhanxing,hainengzengjiaguangze。ranhoutanzaisanyouganjingdaocaodezhulianshangliangshai,bingfanzhuanyici,shiliangmianganzaojunyun。daishuifenjiangzhi 16%~17%時,就可以收藏和包裝運銷。
