1.原料米可以是新米、陳米、久陳米或米屑的任何一種,或是它們按適當比

2.將(jiang)浸(jin)脹(zhang)的(de)米(mi)和(he)糠(kang)全(quan)部(bu)移(yi)入(ru)粉(fen)碎(sui)機(ji)中(zhong),經(jing)過(guo)兩(liang)台(tai)粉(fen)碎(sui)機(ji)連(lian)續(xu)處(chu)理(li)成(cheng)粉(fen)末(mo),而(er)後(hou)送(song)入(ru)貯(zhu)料(liao)罐(guan)中(zhong),從(cong)此(ci)取(qu)出(chu)一(yi)部(bu)分(fen)返(fan)回(hui)到(dao)第(di)一(yi)個(ge)粉(fen)碎(sui)機(ji)中(zhong),使(shi)初(chu)磨(mo)作(zuo)業(ye)順(shun)利(li)進(jin)行(xing)。從(cong)貯(zhu)料(liao)罐(guan)中(zhong)取(qu)一(yi)定(ding)量(liang)料(liao)粉(fen)移(yi)入(ru)加(jia)熱(re)裝(zhuang)置(zhi)中(zhong),添(tian)加(jia)適(shi)量(liang)的(de)液(ye)化(hua)酶(mei),經(jing)過(guo)短(duan)時(shi)間(jian)加(jia)熱(re)直(zhi)到(dao)85℃,而後移入第二次加熱裝置中,加熱到94~95℃,再輸送到蛋白凝聚裝置中,在第一級蛋白凝聚裝置中,料粉經過一定時間的94~95℃加jia熱re處chu理li,使shi米mi粒li中zhong的de蛋dan白bai質zhi凝ning聚ju起qi來lai,與yu此ci同tong時shi,米mi和he糠kang中zhong的de澱dian粉fen液ye化hua。將jiang米mi蛋dan白bai和he殘can液ye一yi起qi輸shu送song到dao第di二er級ji蛋dan白bai凝ning聚ju裝zhuang置zhi中zhong,經jing過guo一yi定ding時shi間jian的de以yi94~95℃加熱處理,使未凝聚的蛋白進一步凝聚,同時剩餘的澱粉進一步完全液化。
3.然ran後hou全quan部bu通tong過guo第di一yi級ji篩shai,回hui收shou米mi蛋dan白bai並bing用yong溫wen水shui衝chong洗xi,而er後hou將jiang米mi蛋dan白bai連lian同tong殘can液ye一yi起qi通tong過guo第di二er級ji篩shai,再zai送song入ru脫tuo水shui機ji內nei脫tuo水shui。脫tuo水shui的de米mi蛋dan白bai經jing過guo傳chuan送song裝zhuang置zhi進jin入ru連lian續xu幹gan燥zao裝zhuang置zhi內nei,幹gan燥zao到dao規gui定ding的de含han水shui量liang,最zui終zhong的de米mi蛋dan白bai粉fen貯zhu入ru米mi蛋dan白bai貯zhu藏zang罐guan中zhong,並bing裝zhuang袋dai以yi利li運yun輸shu銷xiao售shou。從cong脫tuo水shui機ji出chu來lai的de廢fei液ye則ze回hui到dao貯zhu水shui槽cao中zhong供gong浸jin料liao之zhi用yong。
4.由(you)一(yi)級(ji)篩(shai)和(he)二(er)級(ji)篩(shai)分(fen)離(li)出(chu)的(de)殘(can)液(ye)輸(shu)送(song)到(dao)糖(tang)化(hua)罐(guan)中(zhong),加(jia)入(ru)糖(tang)化(hua)酶(mei)使(shi)之(zhi)水(shui)解(jie),即(ji)獲(huo)得(de)糖(tang)化(hua)液(ye)。將(jiang)糖(tang)化(hua)液(ye)導(dao)入(ru)貯(zhu)料(liao)罐(guan)中(zhong)加(jia)熱(re),同(tong)時(shi)添(tian)加(jia)一(yi)定(ding)量(liang)的(de)助(zhu)濾(lv)劑(ji),通(tong)過(guo)連(lian)續(xu)過(guo)濾(lv)裝(zhuang)置(zhi),所(suo)得(de)糖(tang)液(ye)貯(zhu)入(ru)糖(tang)液(ye)貯(zhu)藏(zang)罐(guan)中(zhong)。該(gai)糖(tang)液(ye)可(ke)用(yong)作(zuo)啤(pi)酒(jiu)、米醋以及料酒等的釀造原料。
5.把上述粗糖液再次通過細過濾機,輸送到貯料罐中,加熱並加入脫色劑,通過提純用過濾裝置,最後將所得的提純糖液貯存備用。
