經過幹燥、保色加工整理而成的幹燥花,既存鮮花之形、色、資、韻,又取幹花之經久不凋,越來越受到人們的喜愛,它非常適合於光線較暗的咖啡廳、酒店以及家庭裝飾。真空冷凍幹燥是近年興起的幹燥花卉的新方法,用此幹燥技術幹燥較大的花朵植株,能夠基本保持幹燥花的形狀、色澤和芳香,無汙染,具有深入研究的前景。
冷凍幹燥的基本原理
zhenkonglengdongganzaoshixianjiangwuliaodongjiedaogongjingdianwenduyixia,shiwuliaozhongdeshuifenbianchenggutaidebing,ranhouzaishidangdezhenkongduxia,shibingzhijieshenghuaweishuizhengqi。zaiyongzhenkongxitongzhongdeshuiqiningjieqi(捕水器)將水蒸汽冷凝,從而獲得幹燥製品的技術。
水的相平衡關係是研究和分析含水物料凍結幹燥原理的基礎,當冰周圍的蒸汽壓低於610.5Pa時,冰加熱升溫可以直接升華為水蒸汽,這就是升華幹燥的理論基礎,真空冷凍幹燥的最基本的工作原理也就在於此。
操作過程
冷凍幹燥過程分為預凍、升華幹燥、解析幹燥3個過程。由於鮮花是由莖稈、葉、花蕊、花(hua)瓣(ban)組(zu)成(cheng),各(ge)個(ge)部(bu)分(fen)的(de)含(han)水(shui)率(lv)不(bu)同(tong),若(ruo)研(yan)究(jiu)植(zhi)株(zhu)各(ge)部(bu)分(fen)的(de)幹(gan)燥(zao)效(xiao)果(guo),應(ying)首(shou)先(xian)測(ce)定(ding)各(ge)部(bu)分(fen)的(de)含(han)水(shui)率(lv),並(bing)通(tong)過(guo)儀(yi)器(qi)分(fen)別(bie)測(ce)量(liang)出(chu)它(ta)們(men)各(ge)自(zi)的(de)共(gong)熔(rong)點(dian)和(he)共(gong)晶(jing)點(dian)。
1.預凍過程

3.解析幹燥過程

gaowendiyayouliyujiexiganzaojinxing,duijiexiganzaoshijianbuzhanzhuyaodiweidewuliaoganzao,rulengdongdefanqiepian,qizhongkeyidongjiechengbingdejiegoushuihedaliangyoulishui,yuezhan95%,解析幹燥時間很短,凍幹周期主要取決於升華幹燥時間。這時,提高幹燥速率的考慮措施就應以升華幹燥為主。
無論升華幹燥還是解析幹燥,對冷阱溫度的要求都是相似的,文獻表明:當冷阱溫度低於-50℃時,再過多地降低冷阱溫度,對縮短幹燥時間意義不大。目前,冷阱溫度一般設為-45~50℃。
真空冷凍幹燥花的過程及特點
1.真空冷凍幹燥花的特點
(1)原料來源廣泛,到目前為止,世界各國經常使用的幹燥花植物種類約有2000~3000種。
(2)姿態自然質樸,不僅具有植物的自然風韻,而且最大限度地保持了植物固有的形狀和色澤。
(3)使用管理方便,不僅可以在較長的時間裏保持其形態和色彩,而且儲存、銷售期長。
(4)複水性能好,食用花複水之後,可保持其原有的美麗形狀,引起人們的食欲。
(5)它的收縮率遠遠小於采用其他方法幹燥得到的幹燥花,能夠最大限度地保持新鮮時的形態。
(6)冷凍幹燥設備投資費用較大,操作費用較高,導致其成本高。
2.真空冷凍幹燥花的實踐
為探索幹燥花加工新技術,李保國等人做了紫色補血草、黃色萬壽菊、紅色月季花的冷凍幹燥試驗,測定了它們各部分的平均含水率,試驗中預凍溫度為-65℃,真空度設為10Pa。采用真空冷凍幹燥鮮花,花的外形保持較好,有的顏色會稍有變化。月季和補血草的莖、yijibuxuecaodehuaduojibenweishousuobianxing,wanshoujuheyuejidehuabanshaoyoubianxing。yuejihuayansebixianhuayansebianshenshaoan,huangsedewanshoujuyansebianqian,zisedebuxuecaodongganhouyansejibenbubian。ercaiyongrefengganzao,dangganzaowenduxuanwei50℃時(shi),幹(gan)花(hua)會(hui)產(chan)生(sheng)嚴(yan)重(zhong)的(de)收(shou)縮(suo)變(bian)形(xing),此(ci)外(wai),李(li)寶(bao)國(guo)在(zai)試(shi)驗(yan)中(zhong)還(hai)發(fa)現(xian),幹(gan)燥(zao)後(hou)的(de)鮮(xian)花(hua)香(xiang)味(wei)不(bu)及(ji)鮮(xian)花(hua)濃(nong)鬱(yu),而(er)且(qie)整(zheng)個(ge)幹(gan)花(hua)植(zhi)株(zhu)變(bian)脆(cui),容(rong)易(yi)折(zhe)斷(duan)和(he)破(po)碎(sui)。
徐成海做了補血草和文竹的冷凍幹燥試驗,得到的補血草都保持了原來的形狀,花的顏色自然、逼真。可以看出,采用合適的凍幹設備,再進行優化試驗研究,就可以大大縮短冷凍幹燥時間,進行批量生產,實現商品化的要求。
zhuwenxueyanjiulepinzhongweiluoyanghongdemudanhuadedongganshiyan,keyikanchu,huaruihehuabandegongjinghegongrongwendujiaogao,jingheyedegongjinghegongrongwendujiaodi,xuanzeyudongwenduheshenghuajiemianwendushiyingyijingdegongjingwenduhegongrongwenduweiyiju。zhuwenxuefaxian,butongdeganzaotiaojian,mudanhuaganzaodexiaoguobutong。zaiyudongwenduwei-15℃、加熱溫度為20℃時,幹燥12小時,莖葉基本幹透,但花瓣還比較潮濕且出現局部褪色現象,達不到幹燥要求。在預凍溫度為-30℃、加熱溫度為0℃時,幹燥45xiaoshihou,faxianzhenggezhizhujibengantou,ganhouhuabanyansebixianhuashaoan,jingganjibenweishousuobianxing,yehehuabanshaoyoubianxing。yulibaoguodedaodejielunxiangsi,ganhoudezhizhuyecunzaibiancui、容易折斷和破碎的現象。因此,朱文學認為,不進行預處理的牡丹雖然在一定的條件下能夠幹燥,而且能夠基本保持外形、顏色和花香,但幹花達不到鮮花的效果,且幹燥時間長,因此,應著重研究牡丹花的預處理工藝,開發增加植株韌性、減小脆性的技術,以保證後繼加工和觀賞。

3.冷凍幹燥花卉應注意的事項
