鮮河粉是米粉中又一大類,在廣東、廣西、湖南等南方數省、自治區廣泛分布,產量巨大。其中以廣州市白雲山東南麓的沙河鎮生產的切粉最負盛名。當地以一種稱為“細金風”deyouzhixianmi,peiyibaiyunshanqingchetianrundeshanquanshuimochengxihuademijiang,zaibushangtanbozhengshuhouboluoqiechengkuantiaozhuang,jingyingtitou,shuanghuakekou,kechaoketangkeban,shendexiaofeizhexiai。yinci,qiefenyouchengshahefen,jianchenghefen。youqishichaoniurouhefenheniunantanghefen,xiaoluzuiguang,shichaloujiusibukequeshaodeshipin。hefenshengchanzhonghaikeyitianjiaxiami、叉燒等,也可以卷成腸粉。
鮮沙河粉的生產工藝:大(da)米(mi)一(yi)去(qu)石(shi)一(yi)精(jing)碾(nian)一(yi)清(qing)洗(xi)一(yi)浸(jin)泡(pao)一(yi)磨(mo)漿(jiang)一(yi)篩(shai)濾(lv)一(yi)蒸(zheng)漿(jiang)一(yi)切(qie)條(tiao)一(yi)冷(leng)卻(que)一(yi)成(cheng)品(pin)沙(sha)河(he)粉(fen)的(de)生(sheng)產(chan)和(he)榨(zha)粉(fen)生(sheng)產(chan)不(bu)同(tong)之(zhi)處(chu)在(zai)於(yu),沙(sha)河(he)粉(fen)生(sheng)產(chan)不(bu)需(xu)擠(ji)壓(ya),隻(zhi)需(xu)將(jiang)米(mi)漿(jiang)片(pian)蒸(zheng)熟(shu),然(ran)後(hou)切(qie)成(cheng)長(chang)方(fang)形(xing)細(xi)條(tiao)狀(zhuang)。
其生產的基本原理是:將含有55%yishangshuifendedamidianfenkelirujiangliyonggaowenchongfenhuhua,youyushuifengao,tanjianghoudubo,yinciredugao。jinglengquehou,damidianfenbufenkouhua,chengweizhengkuaixinenjiebaideningjiaobopian。
切粉的加工方法是:將大米精碾去雜,經清洗浸泡後,用磨漿機磨成17~20°Bé的米漿,米漿過80~100mudeshaijuan,lvquculi。ranhouyongbengshusongdaolishimijiangchuguanzhong,weilebimianmijiangchendian,chuguanshangzhuangyouyepianshijiaobanqi。tiaohaodemijiang,jingfencenghoubotiaojieqi,shimijiangjunyunditubuyujiangliaodaishang,suijiangliaodaijinruzhengjiangjizhengshu,zhengshudefenpianlengquehouqiegecheng5mm左右寬的細長條,即成成品——濕河粉(鮮河粉)。
生產河粉一般以早秈米為主,成品河粉的某些品質達不到消費者的要求,需要添加不同比例的小麥澱粉、玉米澱粉、馬鈴薯澱粉、蕉芋澱粉、馬蹄粉等,以改善鮮河粉的品質。一般添加的比例為:5%玉米澱粉、2%馬鈴薯澱粉、2%蕉芋澱粉、l%matifen,jutibilihaixugenjugezhongdejiagezonghebijiaohouqueding。gezhongdianfendehuhuaxingzhibutong,gongtongzuoyongdejieguoshitishenglexianshahefendepinzhi。yumidianfendezhiliandianfenhanlianggao,zaihuhuahoudelengqueguochengzhongrongyifashenglaohua,suoduanlaohuashijian,fuyudianfenhuxingchengyingxingdeningjiaokuai,bijiaorongyichengxing;馬鈴薯澱粉顆粒大,結構鬆散,糊化溫度很低,透明度較高,不易老化,可有效地防止斷條;添加蕉芋澱粉後,河粉韌性增強,更有“嚼頭”,同時由於透明度很高,可以明顯改善河粉的透明度;添加馬蹄粉有助於提高河粉的咀嚼性。
