瀘lu州zhou大da曲qu酒jiu為wei我wo國guo名ming酒jiu之zhi一yi,具ju有you悠you久jiu曆li史shi。瀘lu州zhou老lao窖jiao大da曲qu酒jiu是shi一yi種zhong用yong大da曲qu釀niang造zao的de蒸zheng餾liu酒jiu,用yong作zuo發fa酵jiao的de窖jiao是shi一yi種zhong陳chen年nian老lao窖jiao,瀘lu州zhou老lao窖jiao大da曲qu酒jiu因yin此ci而er得de名ming。瀘lu州zhou大da曲qu酒jiu除chu傳chuan統tong工gong藝yi操cao作zuo外wai,老lao窖jiao、陳年母糟(萬年糟)和大曲(麥曲)是釀酒的三個重要因素。窖泥、大曲在傳統工藝操作條件下,形成了固有的微生物區係,生產出濃香型著稱的瀘州大曲酒。
目前,成都酒廠應用該成果已使成都曲提高到成都頭曲或全興大曲的水平。
產品特點 瀘酒香型獨樹一幟,具有香、醇、甜、淨的特點。以窖香濃鬱、綿甜甘冽、香味協調、尾淨餘長為其特點。
瀘曲微生物 lujiuzhiquyanyongchuantonggongyi,zaitedingdehuanjingtiaojianxiaxingchengdeweishengwuquxi,zhongleifuzabinghanyoufengfudemeilei,shiwoguoteyoudeyizhongtanghuajihefajiaoji。jingyanjiu,meijunanjunluoshengchangdetezhengfen,you20個類型,主要為曲黴、犁頭黴、根黴、毛黴、白地黴等。酵母菌則以酵母屬為主,也有假絲酵母屬、nineibaomeishu。congxingtaishangyouyuanxing,tuoyuanxinghexibaochenglaxingdeyeshengjiaomu。maiquzhonghaiyoudaliangshengyabaodeganjun。youtamenchanshengdefengfudemeixishifajiaotanghuadeyuandongli。
瀘酒的“新窖老熟” 從窖內發酵獲得的數據表明:窖jiao內nei糧liang糟zao發fa酵jiao過guo程cheng中zhong,微wei生sheng物wu量liang最zui大da者zhe為wei酵jiao母mu,其qi中zhong以yi酵jiao母mu屬shu占zhan絕jue對dui優you勢shi,黴mei菌jun以yi黃huang曲qu黴mei為wei主zhu,也ye有you紅hong曲qu黴mei存cun在zai。瀘lu酒jiu發fa酵jiao除chu酵jiao母mu,黴mei菌jun外wai,窖jiao泥ni細xi菌jun也ye參can與yu名ming酒jiu發fa酵jiao過guo程cheng。梭suo狀zhuang芽ya孢bao杆gan菌jun單dan獨du培pei養yang時shi進jin行xing丁ding酸suan發fa酵jiao,混hun合he培pei養yang進jin行xing已yi酸suan發fa酵jiao。已yi酸suan與yu乙yi酯zhi在zai窖jiao內nei形xing成cheng已yi酸suan乙yi酯zhi,是shi瀘lu酒jiu香xiang味wei的de主zhu體ti成cheng分fen,也ye是shi瀘lu酒jiu香xiang味wei的de來lai源yuan。利li用yong分fen離li的de梭suo狀zhuang芽ya孢bao杆gan菌jun進jin行xing混hun合he培pei養yang,並bing將jiang培pei養yang物wu和he老lao窖jiao泥ni的de人ren工gong培pei養yang液ye接jie種zhong於yu生sheng黃huang泥ni中zhong,培pei養yang成cheng“香泥”,用於改窖和培窖,新窖池一次產酒質量即純,由三曲達到頭曲水平。
