一、原料收儲環節
由於不同產地、不同來源的原料中,可能存在一些物理的、生物的或化學的危害,如農殘、藥殘、重金屬等,因而將是否有原料產地的檢驗合格證明作為關鍵限值來加以控製,這種做法從邏輯上來講上是正確的。原料農藥、重金屬及其他汙染物的控製:hegegongfangconghegejiditigongdejingyanshouhegedeyuanliao。zaicihuanjiezhong,ruhebaozhenghegegongfangtigongdeyuanliaoshilaiziyuhegedejidi。xianxingdebanfaduoshigongyinghutigongcaishoudezhengmingxingwenjianlaibiaoming,renweiyingyouxiangyingdekongzhiyaoqiulaijiaqiangzheyihuanjiedekongzhi,cainengbaozhenggaiCCP點的有效控製。但工廠收購的原料往往不能立即全部投入生產,一般都會經過儲存環節。

二、工序設備的細節管理

三、加工助劑的管理
一(yi)般(ban)加(jia)工(gong)助(zhu)劑(ji)屬(shu)於(yu)化(hua)學(xue)品(pin)類(lei),其(qi)存(cun)管(guan)狀(zhuang)況(kuang)介(jie)與(yu)化(hua)學(xue)品(pin)和(he)加(jia)工(gong)輔(fu)料(liao)之(zhi)間(jian),缺(que)少(shao)一(yi)般(ban)化(hua)學(xue)品(pin)的(de)嚴(yan)格(ge)保(bao)管(guan),其(qi)存(cun)儲(chu)和(he)使(shi)用(yong)的(de)衛(wei)生(sheng)條(tiao)件(jian)低(di)於(yu)加(jia)工(gong)輔(fu)助(zhu)物(wu)料(liao)。如(ru)加(jia)工(gong)助(zhu)劑(ji)的(de)管(guan)理(li)和(he)控(kong)製(zhi)不(bu)當(dang),可(ke)能(neng)會(hui)造(zao)成(cheng)批(pi)量(liang)的(de)質(zhi)量(liang)安(an)全(quan)問(wen)題(ti)。
四、料水管路
按照SSOP的(de)要(yao)求(qiu),對(dui)料(liao)水(shui)管(guan)路(lu)都(dou)有(you)即(ji)定(ding)的(de)衛(wei)生(sheng)操(cao)作(zuo)辦(ban)法(fa),但(dan)對(dui)於(yu)季(ji)節(jie)性(xing)生(sheng)產(chan)的(de)企(qi)業(ye),往(wang)往(wang)是(shi)連(lian)續(xu)生(sheng)產(chan),在(zai)做(zuo)設(she)備(bei)衛(wei)生(sheng)時(shi),很(hen)難(nan)對(dui)料(liao)水(shui)管(guan)路(lu)進(jin)行(xing)全(quan)麵(mian)的(de)衛(wei)生(sheng)清(qing)洗(xi)和(he)衝(chong)洗(xi)工(gong)作(zuo),而(er)這(zhe)些(xie)管(guan)路(lu)因(yin)調(tiao)整(zheng)切(qie)換(huan),會(hui)存(cun)在(zai)滯(zhi)留(liu)現(xian)象(xiang),而(er)這(zhe)些(xie)滯(zhi)留(liu)會(hui)存(cun)在(zai)隱(yin)患(huan),有(you)必(bi)要(yao)進(jin)行(xing)調(tiao)整(zheng)和(he)改(gai)進(jin)。
五、封口檢驗後物料的處理

六、包裝出
往往這些過程在HACCP的危害分析上容易被忽視,而此過程控製不好,導致質量安全事故的發生點。舉例如下:
1、包裝物料的紙張選擇
對於馬口鐵包裝的產品,在包裝以後、出運、kehucunchuguochengzhong,yizhijiechuzhebaozhuangwuliaoyongzhi。erzhidesuanjianxing,xishixinghuizhijieyingxiangdaomakoutiewaibidexiushi,henduoqiyejiuchuxianguozheyangdeqingkuang,zaochenghendadesunshi。
2、包裝出運中的產品防護
產(chan)品(pin)在(zai)包(bao)裝(zhuang)和(he)出(chu)運(yun)的(de)過(guo)程(cheng)中(zhong),監(jian)管(guan)部(bu)門(men)的(de)質(zhi)量(liang)和(he)技(ji)術(shu)人(ren)員(yuan)的(de)素(su)質(zhi)和(he)能(neng)力(li)往(wang)往(wang)不(bu)如(ru)加(jia)工(gong)過(guo)程(cheng)中(zhong)得(de)到(dao)重(zhong)視(shi),而(er)正(zheng)是(shi)這(zhe)個(ge)過(guo)程(cheng),往(wang)往(wang)把(ba)良(liang)好(hao)的(de)產(chan)品(pin)在(zai)最(zui)後(hou)的(de)環(huan)節(jie)產(chan)生(sheng)了(le)損(sun)失(shi)。
前提方案和操作性前提方案是有效地食品安全危害控製措施,其有效應用能控製大部分危害,或者降低危害的程度,從而減輕HACCP計劃的壓力,減少HACCP計劃管理措施的數量。在製定和執行前提方案和操作性前提方案時應當給予足夠的重視。
